How To Make Ultra Crispy Smashed Potatoes Recipe

Ultra Crispy Smashed Potatoes, sweet little potatoes crispy on the outside and creamy on the inside with a generous sprinkle of coarse salt.  There is nothing complicated or fussy about them–– just easy.   My household agrees that potatoes are one of the most delicious, adaptable, and affordable foods on the planet.  Mashed, fried, roasted, and baked––they take them any way they can get them.   I must say, though, these Ultra Crispy Smashed Potatoes hit the high marks for richness.

How To Grill Whole Stuffed Jalapeno Poppers

Whole Jalapeno Poppers, a spicy, cheesy, grilled appetizer that will wow your guest.  The recipe is straightforward with few ingredients, jalapenos, cream cheese, white cheddar cheese, garlic powder, and of course, bacon. Stuffed jalapeno peppers are one of those foods I have been intimidated to cook.  I have eaten many and love them, but I thought they were too much trouble to make for some idea.   I am mainly talking about making them for our Superbowl parties or family gatherings.

Garden Green Beans and New Potatoes

Fresh Green Beans and New Potatoes are a simple side dish full of flavors from the garden: homegrown green beans  and the first crop of new potatoes.   GRANNY'S GREEN BEANS AND NEW POTATOES Growing up, we could not wait for the first crop of green beans and potatoes to come out of the garden. Fresh vegetables are the best if they are fresh out of the garden, and you cannot beat them.  I love Fresh Green Beans and New Potatoes cooked with ham or bacon. This is another side dish that Mother would make by cooking a pan of cornbread, slicing onions and tomatoes, and calling it a meal.

Easy Jello Peach Icebox Pie

Easy Jello Fresh Peach Pie, three ingredients make a fresh peach filling, and a homemade buttery pecan shortbread crust will create a no bake icebox pie you see in your beloved diners.  Be sure to use fresh peaches. If you love peaches as much as I do and can not bring yourself to turn the oven on for a fresh peach cobbler , lattice top peach pie , this foolproof no bake pie is the perfect summertime solution. The best part of this fresh peach icebox pie is you can make it in the morning and serve it by dinnertime, or you can make it a day ahead before serving it.

Pork Belly Baked Beans

Pork Belly Baked Beans, pork and beans enhanced with a glorious slab of pork belly chunks, rich molasses, chopped onions, bell pepper, and ever so slight sprinkle of red pepper flakes deliver these traditional baked beans to an umami adventure.  These Pork Belly Baked Beans are one of the most delicious ways to enjoy pork belly and baked beans, simply delicious. I made a spin on my traditional  Southern Baked Beans for the recipe for the bacon; I switched for a slab of pork belly that I cut up into 1/2-inch chunks.  The pork and beans need to be drained really well to start off with. And the pork belly needs to cook low and slow until done and golden brown, stirring and watching closely not to burn.  If you try to cook it faster, it will present chewy and dry results.

Lemon Bars Recipe

Old Fashioned Lemon Bars are the quintessential southern dessert at teas, luncheons, and showers.  The only recipe you will ever need, a simple, straightforward method.   My Lemon Bars sings the praises of spring coming.  They are so easy to make and are bursting with so much lemon goodness. After you make my recipe, you will not want to go back to store bought or packaged ones again.   My recipe uses a buttery shortbread cookie crust and a rich tangy sweet lemon curd filling. The combination is amazing.

Super Easy Homemade Marshmallows

Homemade Marshmallows have become the gourmet confection of the decade.  And it is no surprise that only a few ingredients are needed to make this candy. Not only do homemade marshmallows taste 100% better than store bought, they are also easy to cut into any size.   With Easter around the corner, using cutters in the shape of eggs, bunnies, little chickens, and tulips will wow your children.

Roast Chicken Recipe

Roast Chicken, a classic Sunday meal delivery with leftover dishes for the rest of the week.  The recipe is simple, the meat tender and juicy, generously seasoned with salt, pepper, and herbs. The best roast chicken recipe has a golden crispy skin on the outside with juicy, tender meat on the inside.  Elegant enough when you need an impressive crowd pleaser or a humble meal for family and friends.   There are a few simple tips to achieve such a goal, from pat drying the whole chicken to adding mouthwatering seasonings.

Hatch Chili Pepper Cornbread

Hatch Pepper Cornbread ,  spicy, robust flavor from hatch chili peppers in classic cornbread gives a smooth heat rather than a kick.  The difference in the taste profile is due to the soil and climate in which the chili peppers are grown. Every year I look forward to Hatch Chili Pepper season.  It comes around the first of August and lasts until the end of September, depending on the weather the season can run shorter or longer. All the buzz about the Hatch Chili Pepper comes from its distinct flavor, smoky, sweet, yet still packed with some heat without being too spicy, as does the jalapeno pepper. Right now, my local grocery stores are showcasing all the ways to enjoy the Hatch Chili Peppers, from using them in salsa to adding them to ice cream.

Caprese Salad Skewers

Caprese Salad Skewers, a simple Caprese salad on a stick, easy to make and, fancy to look at.  The perfect little appetizer to wow your guest any time of the year. With warm weather and the peak of the tomato season coming, I wanted to share one of my favorite appetizers and an afternoon snack, Mini Caprese Salad Skewers.  The best part about this recipe is it only calls for four ingredients, fresh, light, and delightful. Fresh grape tomatoes, mini mozzarella balls, fresh basil, stacked on mini skewers, and a drizzle of balsamic glaze makes for the perfect bite, heaven on a stick.

Pineapple Casserole

Pineapple Casserole, a sweet Southern casserole that can be served as a side dish or dessert at Easter on many Southern tables without a doubt.   It is made with canned pineapple, flour and sugar, sharp cheddar cheese, and topped with crushed Ritz crackers.   Who would have thought pineapple, cheddar cheese, and Ritz crackers coming together would make a remarkable, delicious dish, only in the south.

Roast Bone In Chicken Breast with Fennel

Roast Bone In Chicken Breast with Fennel, an elegant dish, and delicious with complex flavors.  But don't let that keep you from devouring this perfect entree.   Fennel is a wonderfully delicious vegetable when cooked to full tenderness like bone in chicken breast take, which takes longer to cook than boneless chicken breast. My idea that the fennel would lend flavor to the chicken ad the chicken would flavor the fennel nicely was beyond my expectations.  The results were remarkable.

Whole Roasted Cauliflower

Whole Roasted Cauliflower,  a delicious side dish that is meaty and filling enough it could hold center stage as a meatless main dish. Cauliflower has become one of our favorite vegetables.  I have always broken the cauliflower into flowerets and roasted them with a little olive oil and seasonings.  After seeing several recipes come across Instagram, I was so intrigued by roasting a whole cauliflower I had to give it try. The key to getting a tender succulent return on roasting a whole cauliflower is to cook it in butter with fragrant spices and herbs before roasting.  This will cut down on the roasting time and lends a beautiful sauce to serve over the cauliflower cut into glorious steaks.

Stovetop Hamburger Potato Carrot Casserole

Hamburger Potato Carrot Casserole is super easy to make for a weeknight meal.  This was a mainstay meal when my children were growing up. STOVETOP HAMBURGER STEW There is nothing more filling than a hearty bowl of hamburger stew with potatoes and carrots, and this one is ready in 30 minutes. When I tell people we are having Hamburger Potato Carrot Casserole for dinner, they say, "That sounds good, what's in it?"  I answer them with, Hamburger Potato and Carrots--- simple ingredients.

Blackberry Dumpling Cobbler

Blackberry Dumpling Cobbler, luscious, juicy blackberries layered between three layers of buttery, flaky crust with a rich syrup of butter, sugar, vanilla, and water poured over the whole cobbler.  This is where all the magic happens when the dough in the center forms pillows of tender dumplings.  I know you are thinking, why am I posting a recipe for blackberries, a summer berry.  Well, we love blackberries and eat them throughout the year.  I missed the window for posting the recipe this summer and thought, why not.   When I was young and newly married blackberries were only in the grocery stores and better yet on the vines during blackberry season in the summer.  Produce these days have changed so much.  We see blackberries year round in the grocery store and farmer's markets.

Summer Vegetable Gratin

Summer Vegetable Gratin, four simple vegetables layered in a gratin fashion on a bed of sauteed sliced onions then topped with a mixture of buttery breadcrumbs and shredded parmesan cheese.   With summer overload of squash, zucchini, tomatoes, and eggplant, I like to make a lovely Vegetable Gratin.  The vegetables bake into a tender bubbly casserole, rendering them into a vibrant melody of summertime freshness. The vegetables are beneficial to using uniform size, so the gratin cooks evenly and not yielding too much moisture.  Also, the larger the vegetables, the larger the seeds. In the recipe, I use fresh Roma tomatoes, straight neck squash, slender zucchini, and mini Japanese eggplants.  At the last minute, I scattered a few garlic pods in and around the vegetables to enhance the flavors.

Summer Peach and Cherry Salad

Summer Peach and Cherry Salad with Fresh Collard Ribbons and Feta, an elegant salad showcasing fresh seasonal stone fruit.  A beautiful combination of sweet peaches and fresh cherries with the salty taste of feta on a bed of tender collard ribbons. Peach and Cherry Salad On A Bed of Fresh Collard Ribbons This Peach and Cherry Salad is lite and fresh with red onions and a sprinkle of feta on my favorite bed of leafy greens and tender collard ribbons.   Capturing the last of the peach season here in Texas.  We have eaten a ton of peaches this year.   Our favorite orchard is winding down, as well as our local Sams.   The salad is then drizzled with a simple White Balsamic Vinaigrette.

Best Loaded Roasted BBQ Cauliflower Salad

Loaded Keto Roasted BBQ Cauliflower Salad, a low carb version of Loaded Potato Salad, also known as Fauxtato.  Taste just like the standard version with all the flavors and a few carbs. Roasted BBQ Cauliflower Salad The Roasted BBQ Cauliflower Salad is absolutely delicious.  The ingredients are simple and straightforward, cauliflower, bacon, chicken, celery, red onion, red bell pepper, dill pickles, BBQ seasoning, and a dressing of mayonnaise, mustard, and sour cream. Yum.  Traditional potato salad is a favorite around our house for any occasion.  We love it.   It is perfect for potlucks and picnics. You name it, Potato Salad  is going to be on the table. Here recently, my husband has been on a low potassium diet, and potatoes are one of the foods that are very high in potassium.   Wouldn't you know he loves potatoes?   My daughter has been telling me about a delicious faux potato salad.   It is a loaded faux potato salad.

Peach Dumpling Cobbler

Peach Dumpling Cobbler, a cobbler made with fresh sliced peaches layered between three layers of sweet, tender, buttery dough.  Boiling water is poured over the whole cobbler.  The dough transforms magically, making sheets of dumplings. Peach Dumpling Cobbler is the first dessert I want to make as the peach season approaches.  We love my Double Crust Peach Cobbler  recipe, but here lately the Peach Dumpling Cobbler has taken the first choice to make.   They are both easy enough to make.  We just love the dumpling texture in the Peach Dumpling Cobbler.   And really, the only difference between the two recipes is the Peach Dumpling Cobbler has 3 layers of crust instead of two, and 2 cups of boiling water is poured over the whole cobbler.  This is where all the magic happens, tender sheets of dumplings. Since the Peach Dumpling Cobbler is baked with water, I bake it in a deep oblong baking dish.
