Baked Feta Pasta is the perfect fall comfort food, creamy, tomato–y and so incredibly delicious.  It is probably the most straightforward pasta dish I have ever made. When I say simple, everything gets baked together until the tomatoes burst, releasing all their jamminess.  The cheeses get melty, and you stir it all together, making this quick creamy sauce, toss in the chicken and then the pasta.  Generously garnish with more basil.  Boom, dinner is ready.

Hearty Split Pea Soup is made with a meaty hambone, generous carrots, onions, and celery, yielding a flavorful broth.  It is easy to make on the stovetop, but I have added a slow cooker and instant pot option. Split Pea Soup It is soup weather, and Split Pea is one of my personal favorites.  So easy to make, and what better time to use the hambone leftover from the holidays.  There is so much flavor from the bone and meat I always save it for later when I cook beans or collards . This soup recipe is all about going back to my childhood using old fashioned ingredients you have in your kitchen.  The split peas are cheap, and you already have your hambone. The carrots and celery are also inexpensive, a delicious humble soup. I use fresh thyme, a couple of bay leaves, chicken stock, or vegetable stock to elevate the flavor.

Epic Fried Green Tomato BLT Club Sandwich

Fried Green Tomato BLT Club Sandwich, three slices of sandwich white bread toasted and layered in between with perfectly fried green tomatoes with crispy bacon for the first layer and a  perfectly ripe beefsteak tomato with crispy bacon for the second layer.  Two classic sandwiches gloriously combined into one Epic sandwich cut into quarters and held together with toothpicks!    As the summer comes to an end, I am getting in as many fried green tomatoes as I can.  One of my favorite ways to eat them is in a sandwich.  There is just something about all that mayonnaise, a generous sprinkle of salt and pepper sandwiched between to pieces of bread, even toasted.  So good! My favorite sandwich is a BLT.  And my personal favorite way to eat a BLT is in the style of a club sandwich, epic!   When I was a little girl, we lived in Columbia, South America.  My Dad worked for Shell Oil Company, and we were part of 100 Americans who worked and lived in a little town in Columbia.  

No Churn Peach Cobbler Ice Cream
