Who would have thought pineapple, cheddar cheese, and Ritz crackers coming together would make a remarkable, delicious dish, only in the south.

Pineapple Casserole is so easy and quick to make.  It pares well with any pork dish, especially Baked Ham.

I like to use sharp cheddar cheese and brown sugar to elevate the flavor of the pineapple.  And oh, is it elevated.

With the crushed Ritz crackers tossed in melted butter blanketed on top with a very very light sprinkle of cayenne pepper, simply scrumptious.
