Southern Pineapple Casserole
This pineapple casserole with cheddar cheese is a classic that has been a staple on the tables of Southerners for untold years.
Who would have thought that pineapple, cheddar cheese, and Ritz crackers combined would make a remarkable, delicious dish only in the South?
Pineapple Casserole is so easy and quick to make. It pairs well with any pork dish, especially Baked Ham.
I like to use sharp cheddar cheese and brown sugar to elevate the pineapple's flavor. And oh, is it elevated!
The crushed Ritz crackers, tossed in melted butter and topped with a very light sprinkle of cayenne pepper, are simply scrumptious.
Pineapple Casserole can be served hot or cold, scrumptious either way. I hope you will be making some for your Easter meal.

HOW TO MAKE PINEAPPLE CASSEROLE
Preheat oven to 350 degrees F. Grease a medium size baking dish with butter. Drain the pineapple in a bowl and reserve the juice.
In a large bowl, stir together the sugar, brown sugar, and flour. Add the reserved pineapple juice. Stir until well combined and no lumps remain. Stir in 1 cup of the shredded sharp cheddar cheese.
Add the drained pineapple chunks and gently fold them together, being careful not to mash the pineapple too much.
Pour the mixture into the prepared casserole dish. Sprinkle evenly with the remaining shredded sharp cheddar cheese evenly to the sides of the dish.
In a small bowl, toss together the melted butter and cracker crumbs. Sprinkle the cracker mixture over the shredded sharp cheese evenly to the sides of the dish.
Sprinkle a very small amount of cayenne pepper over the crackers for a subtle hint of heat. This is optional and can be omitted if desired.
Place in the oven and bake for 30 to 40 minutes, or until the cheese is bubbly and the crackers are golden brown.
Remove from the oven and let cool for 15 minutes before serving.
