Fennel is a wonderfully delicious vegetable when cooked to full tenderness like bone in chicken breast take, which takes longer to cook than boneless chicken breast.

My idea that the fennel would lend flavor to the chicken ad the chicken would flavor the fennel nicely was beyond my expectations.  The results were remarkable.


When the fennel is cooked to full tenderness, it can be quite sweet and so flavorful and pared with the roasted chicken, quite exquisite.

WHAT YOU WILL NEED TO MAKE ROAST BONE IN CHICKEN BREAST WITH FENNEL


  • Large baking dish

  • Large knife

  • Avocado oil

  • Fennel

  • Onion

  • Whole chicken or bone in chicken breasts

  • Salt and Pepper

  • Butter

  • Lemon wedges

HOW TO MAKE ROAST BONE IN CHICKEN BREAST WITH FENNEL


  • Heat oven to 450 degrees F.  Drizzle avocado oil into the bottom of a baking dish.  Arrange sliced onion over the oil, overlapping pieces.   Arrange the sliced fennel over the onion slices.

  • Sprinkle the bone in chicken breasts or whole cut up chicken with salt and pepper.  

  • Arrange the chicken breasts over the layer of fennel with skin side up.  Generously salt and pepper the chicken breasts.  Arrange the lemon wedges around the chicken.

  • Drizzle generously avocado oil over the seasoned chicken breast.  

  • Roast for 20 minutes and then spoon pan drippings over the chicken and rotate in the oven and roast another 20 minutes.  If the chicken starts to brown too much, adjust the temperature of the oven.  

  • Depending on the size of the chicken breasts, an additional roasting time may be necessary.  These were large chicken breasts, so I roasted the chicken breasts another 10 minutes.

  • Remove from the oven and pour melted butter evenly over the chicken breast.  Cover and tent with foil for 10 minutes before serving.

  • Serve each piece with some fennel and onion with a little of the pan juices spooned over, garnish with lemon wedges.

  • 1/3 cup avocado oil
  • 2 bulbs fennel, trimmed and cut into 1/4-inch thick slices
  • 2 whole onion, peeled and cut into 1/4-inch thick slices
  • 3 large bone in chicken breasts (or one whole chicken cut up)
  • 3 teaspoons salt (divided)
  • 4 teaspoons coarse ground pepper (divided)
  • 1/2 butter, melted
  • 2-3 lemons cut into  wedges
