Chicken.  Use bone-in, skin-on chicken thighs.  Try to buy chicken thighs the same size for even cooking.

Pat chicken dry.  Before seasoning with salt and searing, thoroughly pat the chicken thighs dry with a paper towel.  The moisture on the skin will lead to steaming rather than crisping.  You can refrigerate the chicken thighs uncovered for an hour or overnight to further dry out the skin.  (See note to consider brining.)

Start with a hot skillet.  Preheat the skillet or oven-safe skillet (like an iron skillet) in a 425°F oven while preparing the chicken.  This is important to sear the chicken thighs skin side down.

Consider brining.  Generously salting the chicken thighs on both sides at least 30 minutes to an hour while sitting in the refrigerator can draw out moisture and allow the salt to permeate, leading to better flavor and crispier skin.

Cook uncovered.  When placing in the oven, cook uncovered to avoid steaming the skin and keep it crispy.

To maintain crispiness.  If the garlic butter sauce cools down, reheat it to warm.   Spoon warm garlic butter sauce over the chicken just before placing the chicken thighs in the oven to roast.

WHAT YOU NEED TO PREPARE CRISPY CHICKEN THIGHS


Large (12") iron skillet or enamel cast iron skillet
Tongs
Chicken thighs
Salt
Garlic
Butter
Green beans (fresh or frozen)

HOW TO PREPARE CRISPY CHICKEN THIGHS


Preheat oven to 425 degrees F.  Place a cast iron skillet or an enamel cast iron skillet in the oven while preparing the chicken thighs.  

In a small bowl, add the butter and minced garlic. Microwave until the butter is melted; set aside.

Pat the chicken thighs dry with a paper towel and season all sides. If using fresh green beans, trim the ends. If using frozen green beans, do not thaw them out; add them frozen.

Remove the skillet from the oven and heat it over medium heat. Place the chicken skin side down and cook until crispy and golden, without moving it. 

After 10 minutes and some of the fat has been released, move the chicken around to keep even browning. Cook another 15-18 minutes more and remove the chicken to a platter skin side up. Leave the rendered fat in the skillet.

Add the prepared green beans to the skillet. Sprinkle salt and toss the green beans with the fat, coating them well.  

Place the chicken skin side up, nestled in the green beans. Drizzle the butter garlic mixture over the skin side up chicken. Transfer the skillet into the oven. 

Roast in the oven until the chicken is golden brown and crispy and the internal temperature is 160 degrees F. in the thickest part of the chicken, approximately 15-20 minutes. 

The size of your chicken thighs will depend on how long to roast them.
