Brown Sugar Banana Bread made with Splenda

Are you a fan of Banana Bread so much so that you find yourself craving it and wishing you could make it with fewer calories?  Well, that is the way it is with me, so I decided to make one using  the recipe I make most of the time and substituting Splenda Brown Sugar in place of the sugar. The aroma of the   Brown Sugar Banana Bread coming out of the oven was incredible. As I was taking it out of the oven, you could see that it was a wonderful golden brown crust with little chunks of bananas peeking out.  I like to dice my bananas instead of mashing them. The bread was very moist and sweet---just what I was looking for without all the calories. Hope you get to make some soon!  Enjoy!

Candied Jalapeno Mango Salsa

Our grill has been going non stop since the beginning of spring.  We have also been eating fresh vegetable and fruit that are so readily available at farmers markets and grocery stores this time of the year, like mangoes. 

Strawberry Shortcake Cookies

Pin It Seeing these cookies over at Bakergirl , I knew that it was only a matter of time before I would be making some.  These Strawberry Shortcake Cookies are the best of both worlds.  They have the lusciousness of Strawberry Shortcake and the tenderness of a cookie.  They could even pass for a scone in the right setting, such as serving them at a brunch.  I did agree that they need to be eaten in the same day. 

14 Day Sun Pickles {Granny's Recipe}

14 Day Sun Pickles , homemade dill pickles tailored to suit your taste, just not the traditional canning method.  Simple pickling method that leaves you with a fantastic crunchy cucumber. Summer is here in East Texas, and cucumbers are beginning to make in the gardens. One of my favorite summer traditions at my house growing up was making 14 Day Sun Pickles with my Mother.

Apple Cheesecake Pie

Apple Cheesecake Pie , traditional apple pie filling baked with a creamy, rich cream cheese filling pour over it.  You have cheesecake and apple pie together in one perfect pie crust!   Do you want Apple Pie or Cheesecake?  Why not have both is what I said the other day when I was looking to use up some pie dough I had leftover from making my Fresh Peach Cobbler With A Double Crust . It is hard to improve on a scrumptious classic Apple Pie unless you pour a creamy layer of cheesecake filling on top and bake it to perfection. This recipe came about from a Mincemeat Cream Cheese Pie I make every year at Christmas. I think you could probably pour this filling over any pie, and you would have the perfect pie. 

Spinach, Arugula and Apple Salad With Soy Sauce Toasted Pecans

With the summery weather here in Texas, I am increasing more salads in our menu.  Salads do not have to be so boring, especially with the availability of so many different salad greens in the markets.  One of my favorite combination of salad greens is spinach and arugula.  This Spinach Arugula Salad tossed together with thinly sliced apples and Soy Sauce Toasted Pecans explodes in your mouth with the saltiness of the pecans and sweetness of the apples.  My mouth is watering just sitting here typing the recipe.  Are you ready to enjoy this wonderful salad --or are you willing to take it to a main course, serving it with some wonderful grilled chicken?

Strawberry Limeade {Sonic Strawberry Limeade Copycat}

Sonic Strawberry Limeade,  made with freshly squeezed lime juice and sweetened strawberry syrup.  A tangy, sweet combination drink enjoyed by all at one of America's drive-in fast food restaurants. Strawberries are so plentiful right now, which gives me all kinds of ideas for recipes.  I had some strawberry juice leftover the other day from a recipe for Strawberry Sheet Cake Shortcake .

This is an easy and quick Asian Cucumber Salad , that I found to be very refreshing with these lingering high temperatures here in East Texas. Grilled Asian Style Marinated Chicken {The Main Attraction}

This past Memorial Day weekend, we fired up the grill for this quick and yummy Grilled Asian Style Marinated Chicken , and you might say it was the main attraction .  I am so excited to be grilling this year.  Most of our grilling season last year was spent in the hospital with my husband.   I am so very happy to say that this summer is not the case.  My husband is continuing to improve and is well on his way to a full recovery.   I have made this recipe several times in the oven with pork medallions as well as with chicken thighs, and they were delicious, but I must say the grill is my favorite.
