I love everything about roasted root vegetables, especially how easy and quick they are to roast. While they are hanging out, roasting in the oven, I can prepare other dishes to go with them.

These roasted whole carrots are fun to make. Peel them and toss them in a mixture of seasonings, brown sugar, and avocado oil.  

The carrots' natural sweetness and the deep seasoning flavor are excellent.  

The small amount of brown sugar complements the mild sweetness of the carrots. Honey is also an option.

Sharp vegetable peeler
Rimmed baking sheet pan
Parchment paper
Large bowl
Small bowl
Whole fresh carrots
Avocado oil
Coriander
Smoked paprika
Red cayenne pepper
Brown sugar
Salt and coarse black pepper

HOW TO MAKE ROASTED WHOLE CARAMELIZED CARROTS


Preheat the oven to 425 degrees F.  Line parchment paper in the rimmed baking sheet pan; set aside.

Set aside in a small bowl a mixture of salt, black pepper, paprika, coriander, red cayenne pepper, and brown sugar.

In a large bowl, toss the carrots with avocado oil.

Arrange carrots loosely across the prepared pan; avoid overlapping the carrots.

Sprinkle the prepared seasoning mix over the carrots.

Place in the oven and roast for 20 minutes.

Remove from the oven, turn over the carrots, and place them back in the oven for 15-20 minutes or more until the carrots are tender.
