- Sharp vegetable peeler
- Rimmed baking sheet pan
- Parchment paper
- Large bowl

- Avocado oil

HOW TO MAKE ROASTED WHOLE CARAMELIZED CARROTS
- Preheat the oven to 425 degrees F. Line parchment paper in the rimmed baking sheet pan; set aside.
- Set aside in a small bowl, and mix salt, black pepper, paprika, coriander, red cayenne pepper, and brown sugar.
- In a large bowl, toss the carrots with avocado oil.
- Arrange carrots loosely across the prepared pan; avoid overlapping the carrots.
- Sprinkle the prepared season mix over the carrots.
- Place in the oven and roast for 20 minutes.
- Remove from the oven, turn over the carrots, and place back in the oven for 15-20 minutes or more until carrots are tender.
