Lemon Apricot Lush Dessert {A cool and refreshing dessert for Easter!}

The recipe for this Lemon Apricot Lush Dessert is a lighter version of the traditional Lemon Lush desserts you see over the internet.  Sometimes you want a cool and refreshing dessert after you have eaten rich food.  Lemon desserts just brighten anyone's meal.  
Lemon Apricot Lush Dessert would be a perfect dessert to serve for  Easter.  This recipe only calls for 4 ingredients and comes together quickly.  Just put it in the refrigerator for a couple of hours and it is ready to serve.    Hope you make it soon.  Enjoy!


Lemon Apricot Lush Dessert

1 (22 oz.) can lemon pie filling
2-3 cups of mini marshmallows (I used cottage cheese sometimes for less calories)
1 (15 oz.) can apricots, drained and quartered (or mandarin organs, or pineapple chunks)
1 (12 oz) tub cool whip or (I used 3 cups homemade whip cream)

In a medium bowl, fold together lemon pie filling and marshmallows or cottage cheese.  Add apricots or other fruits and fold all together being sure not to mash the apricots to much.

Spoon into a 9x13 dish.  Spread evenly to all sides of the dish.  Spread cool whip over the top.

Refrigerate for 3 hours or overnight.

When ready to serve, using a large spoon, scoop dessert and fill serving cups.
