Baked Apple Delights

Poached Apples, baked in a lovely bath of apple cider that simmers into a wonderful syrup.  Serve them stuffed with glazed pecans, hot or cold with a dollop of whipped cream.


When buying apples for my Crockpot Apple Butter, Apple Pie Fritters, and for my husband who eats an apple a day, I decided to make some Poached Apples.

I served these at one of the catering events I hosted.  We made 250 of them.  You would think I never wanted to see them again, but they were such a hit I decided to make a batch for my husband.


These poached apples are a simple way to achieve an almost perfect way to enjoy the purest flavor of an apple. 


They are peeled, cored, and baked in apple cider then baked some more with brown sugar and butter.    The recipe is so easy, and a perfect lighter fall dessert or a lovely dish to serve at a brunch.


Baked Apple Delights
    8 gala apples
    1/2-3/4 cup brown sugar
    3-4 cups apple cider 
    4 cinnamon sticks
    2 teaspoons apple pie seasoning
    1/2 cup butter, cut into 1tablespoon 
    1/2 cup glazed pecans
Preheat oven to 350 degrees F.  In oblong baking dish, pour the apple cider; set aside.   
Peel and core an apple and place immediately in apple cider.  Do this until all the apples have been peeled and cored. This will prevent apples from turning dark until all the apples are peeled.  

Turn the apples over two or three times to coat the apples well.

Bake for 15 minutes then turn each apple over in the apple cider to coat them again and bake 30 minutes.  Turn apples over.  

Sprinkle apple pie seasoning over each apple.  Spoon brown sugar to fill each apple to the top.  

Place 1 tablespoon butter on the top of the apple and brown sugar.  Place back in the oven and 15 minutes or until apples are tender.  Test with a toothpick to see if they baked long enough.  (This will depend on the size of the apple if additional baking is needed.) 

Serve hot or room temperature topping each apple with chopped glazed pecans or sweetened whip cream. 

Sweetened Whipped Cream

    1 cups cold heavy cream
    1/4 cup powdered sugar
    1/2 teaspoon vanilla extract
Whip cream on medium-high speed using a hand-held or stand mixer until almost stiff. Add powdered sugar and vanilla and whip until stiff.
