Fried Green Tomato, Bacon and Pimento Sandwich

Fried Green Tomato, Bacon and Pimento Sandwich, homemade pimento cheese, crispy bacon, glorious fried green tomatoes sandwiched between two slices of golden toasted bread.  The ultimate summertime sandwich that sings the taste of the South. What do you do when you have leftover fried green tomatoes, crispy bacon, and pimento cheese?  You guessed it, make Fried Green Tomato, Bacon, and Pimento Sandwiches.   I like to fry a lot of green tomatoes for a meal.  We love leftovers.  You may ask if they are still crispy leftovers.   My recipe for green fried tomatoes lends the best texture for leftovers.   I always cook twice the amount of bacon for breakfast, too, for leftovers or to sprinkle on vegetables we have for supper.   The pimento cheese is made ahead for a quick sandwich for lunch on most days.  Pimento Cheese will keep in the fridge for weeks.  An excellent snack to have with crackers watching tv.

Homemade Pimento Cheese and Homemade Chicken Salad are the favorite salad to make sandwiches.  Pick out a favorite bread, and you can have the perfect sandwiches for any gathering. I was thinking this past Wednesday about what dish I was going to take to our Sunday evening Life Group meeting, when I thought about August is National Sandwich Month, and what better time to take sandwiches.

Secret To Better Pimento Cheese

Better Pimento Cheese , delicious pimento cheese with a few secret ingredients to wow your guest.  Mix all the ingredients together,  put it in the fridge and the flavor just keeps getting better and better.   I have a friend, Pat Williams, that makes the most delicious P i m e n t o C h e e s e you will ever eat.  My family calls it Better Pimento Cheese . There are a few secrets that she shared with me about what makes hers stand out. One thing, she uses is an extra sharp cheddar cheese, (preferably Cabot Extra Sharp Cheddar Cheese that she shreds herself), Helmsman's mayonnaise, and here is the crescendo diced Jalapenos .  How yummy is that?  She says that if you can wait, it taste better after being refrigerated for a day or so.  Thank you, Pat, for sharing your wonderful recipe with me!

Traditional Stuffed Eggs

Traditional Stuffed Eggs are as old as the hills in the south.  The traditional ingredients are mashed egg yolks, mayonnaise, yellow mustard, salt, and pepper with a little bit of minced  onion and minced pickles.  Garnishes are optional. As time has gone on, the ingredients have expounded to the hot and spicy and all kinds of fillers.  It is easy to create your own variations. The binder is usually mayonnaise, but sour cream, yogurt, and cream can be used.   The fillers should be more in ratio than the mashed egg yolks, and make sure they are minced so they are easy to scoop and fill in the egg white half. Have you ever added too much mayonnaise or mustard to your egg yolks, and the filling is too runny? Air Fryer Fried Green Tomatoes

These air fryer green tomatoes deliver a crunchy outside with a smooth succulent inside.  The perfect summer food you will ever devour.   Fried Green Tomatoes The air fryer is the perfect way to cook fried green tomatoes.  I like to call them healthified fried green tomatoes.  To finish them off, you can sprinkle a generous drop of coarse salt, salty capers, or a few drops of hot sauce. To make air fryer green tomatoes, start with medium size unripe tomatoes.   I like to use light green tomatoes that are pale green and have a little pink coming through the skin.  They are not quite so sour.   Don't make the mistake of choosing green heirloom tomatoes.  Green heirloom tomatoes are fully ripe tomatoes, a different variety of tomatoes. I love combining self=rising cornmeal and panko for the coating, and of course, don't forget to double dip to get the most delicious, crunchy outside, divine.
