Roasted Bacon and Sage Peaches

I have been wanting to make these roasted peaches for some time and never wanted to heat the oven long enough for them to cook.

The days here in Texas are beginning to cool down, and the peaches are getting fewer in number at the grocery stores, but the stores have started stocking fresh sage.  Now that is the end of one season and the beginning of another, summer and fall.

The flavor combination of the bacon and sage wrapped around the peach is incredible.  Then the drizzle of the balsamic honey vinegar.  Oh, my!

The word that comes to my mind to describe the taste is umami, sweetness, sourness, bitterness, and saltiness.

The appetizers come together rather quickly if you have the bacon cut into 4-inch strips, the sage leaves pinched off the steam and the peaches sliced.

One thing I do recommend is that you are ready to pop them in your mouth a few minutes after they are removed from the oven.  They are much tastier.

They are great to make ahead and keep in the fridge until just ready to cook them.

I made these today for my husband, and we celebrated the end of summer.  He loved them.

Next year peach season, I am going to have to remember and make these for a surprise for my husband.
