Chocolate Chip No-Bake Peanut Butter Energy Bites

I have been hearing a lot about these no-bake energy bites for a while and had no idea how irresistible they are.  

This last weekend I was introduced to these incredible delicious no-bake bites.  They remind me so much of the famous No-Bake Chocolate Cookies.  Now you know how yummy they are.

We ended up making two batches of these jewels.  We would probably have made another batch, but we ran out of a few of the ingredients.  Did you know these are healthy energy bites?

Chocolate Chip No-Bake Peanut Butter Energy Bites

These irresistible little bites of heaven are so easy to make.  If you want to keep them on hand for a quick snack, you can freeze them and pull out as many as you want.  In fact, that is going to be the only way I can keep them in the house.   When you see them on the plate, you can't resist picking one up.  

The recipe is simple with only 4 ingredients, oatmeal, peanut butter, honey, flax seed meal, and mini chocolate chips.  

With this master recipe, the add on ingredients are endless, chia seeds, raisins, peanuts, and on and on.

Chocolate Chip No-Bake Peanut Butter Bites

These are simple and healthy little no bake bites that are a delicious snack, grab and go breakfast, or even a mini dessert.
prep time: 20 MINScook time: total time: 20 mins

INGREDIENTS:


  • 3 cups whole grain oatmeal (I used old fashioned)
  • 1 1/2 natural peanut butter, stirred well
  • 1/2 cup honey
  • 2/3 cup mini semisweet chocolate chips
  • 1/2 cup flax seed meal

INSTRUCTIONS


  1. In a bowl, add ingredients according to the listing. Stir all ingredients together with wooden spoon. As mixture begins to come together and it is difficult to mix, start using your hands to finish mixing the dough.
  2. Once the mixture is well mixed, use a tablespoon cookie scoop to form dough into 1-inch balls. Place the dough balls on a sheet pan and freeze for an hour.
  3. After the dough has hardened a bit, place them in an air-tight container to store.
