Strawberry Vanilla Wafer Icebox Pie is a no-bake pie.  Icebox pies are especially popular in the South where days here are sultry hot and us Southern ladies enjoy serving refreshing and delicious desserts. Early in the 1900's there were iceboxes in most house, and the pies were made with a baked pastry crust and a whipped filling without any worry of the pie oozing all over the plate.  

Sugar Cookie Peach Cobbler

Creamy Peach Cobbler  is one of those  quick cobbler   recipes  that can be ready in a jiffy!  Layer the ingredients in a baking dish and resist stirring and watch the magic happen. As a tradition, every year around my daughter's birthday, we try to go to our favorite Peach Orchard! This year we actually got to go on her birthday, which was sweet. There are so many fresh vegetables and fruits, you cannot leave without something.   Who remembers the roadside produce stands that were popular in the '50s and '60s?  This is as close to one as you can get these days. Three Bean Salad,  a throwback salad from the 50s.   It is a great salad for picnics, cookouts, and at any family gatherings, it will serve a large crowd.  Two weeks ago I shared a favorite retro recipe for Southern Stuffed Cabbage Rolls .  Today I am sharing another retro recipe and a summer favorite .  This salad can go anywhere.

Southern Style Stuffed Cabbage Rolls  are one of my favorite dishes my Mother handed down to me.  Her recipe is very simple to make using few ingredients that make for an inexpensive meal. They are made with hamburger, rice,  onions, and covered in a ketchup diced tomato sauce.

7 Layer Mexican Dip

This   7 Layer Mexican Dip  is a long time favorite in our house.    Once you gather all the ingredients, it comes together rather quickly.  It is better to serve it in a oblong dish verses the bowl you see mine in, because you want to be able to reach in there and grab a little of all the layers.   Be sure you have plenty of chips close by.  {grins}

Leftover Ham with Bowtie Pasta

Leftover Ham with Bowtie Pasta   is  made with simple ingredients you probably have on hand.  It is a light and refreshing dish, and the peas add a nice sweet touch to the dish. On special occasions, we usually have two meat dishes with  ham being one of them , and there are rarely any leftovers. We have teenage grandsons and some big eater around our house when we all get together, so I intentionally cook plenty to have leftovers the next day.
