Chili Cheese Hot Dog Bubble Up Bake

Chili Cheese Hot Dog Bubble Up Bake,  buttery cut up pillows of dough and bite size hot dogs layered together with creamy, gooey cheese and chili with beans.  Garnish with your favorite condiments, and you have America's classic Friday night football food rolled up in a casserole. When my children were in school, Friday Nights were hot dog nights.  We had to be back up at the school soon after they came home, so that meant supper had to be something quick to eat much less quick to make.  Most Friday nights we ate Baked Hot Dogs just like I use to eat on Friday nights when I was in high school.  Hot dogs are classic and preparing them ready to grab and go is the perfect food for our game night. Chili Cheese Hot Dog Bubble Up has four main ingredients plus the ingredients for garnishing.  My children growing up this Chili Cheese Hot Dog Bubble Up bake would have been a huge hit.

Southern Fried Whole Catfish,  a delicious authentic Southern dish.  The catfish is well coated with seasoned cornmeal and flour mixture, then deep fried in hot oil until crispy, crunchy delicious.   Summer is closing down, and in the past years by this time, we have fried catfish at least two or three times.  But as the years go by they are few and far between.   It is just so much easier to go to our favorite catfish restaurant and buy a fried catfish dinner.  And we have excellent restaurants now that serve some delicious catfish.

One of my favorite things about summer is all the fresh fruit in the grocery stores.  I  almost always tend to buy more than we can eat, that including fresh strawberries, and I wait until the last minute to use them up before they spoil.   This summer I started slow roasting half of the strawberries when I buy them.  I like to roast them whole instead of slicing them.  The berries hold their shape well while roasting coming out plump and luscious.

What do you do when you have leftover fried green tomatoes, crispy bacon, and pimento cheese?  You guessed it, make Fried Green Tomato, Bacon, and Pimento Sandwiches.   I like to fry a lot of green tomatoes for a meal.  We love leftovers.  You may ask if they are still crispy leftovers.   My recipe for green fried tomatoes lends the best texture for leftovers.   I always cook twice the amount of bacon for breakfast, too, for leftovers or to sprinkle on vegetables we have for supper.   The pimento cheese is made ahead for a quick sandwich for lunch on most days.  Pimento Cheese will keep in the fridge for weeks.  An excellent snack to have with crackers watching tv.

Epic Fried Green Tomato BLT Club Sandwich

Fried Green Tomato BLT Club Sandwich, three slices of sandwich white bread toasted and layered in between with perfectly fried green tomatoes with crispy bacon for the first layer and a  perfectly ripe beefsteak tomato with crispy bacon for the second layer.  Two classic sandwiches gloriously combined into one Epic sandwich cut into quarters and held together with toothpicks!    As the summer comes to an end, I am getting in as many fried green tomatoes as I can.  One of my favorite ways to eat them is in a sandwich.  There is just something about all that mayonnaise, a generous sprinkle of salt and pepper sandwiched between to pieces of bread, even toasted.  So good! My favorite sandwich is a BLT.  And my personal favorite way to eat a BLT is in the style of a club sandwich, epic!   When I was a little girl, we lived in Columbia, South America.  My Dad worked for Shell Oil Company, and we were part of 100 Americans who worked and lived in a little town in Columbia.  

Southern Fresh Cherry Cake

Southern Fresh Cherry Cake, quick and easy deliciously moist cake, made with self rising flour a touch of cornmeal, buttermilk, eggs, and butter.  Serve it plain with a dollop of whip cream or as we did with a dusting of powdered sugar.   The cherries are so plentiful in the grocery stores right now and what better way to showcase them than to make a Southern Fresh Cherry Cake.   I actually had to buy a couple of bags of the cherries to have enough to make the cake.  My grandsons are huge fans of these little jewels.   Like most fruits, fresh cherries have the pros and cons.  Fresh Cherries do not have a lot of nutritional value, but they are high in water content and are super beneficial to eat in the summer to hydrate.

Southern Shrimp Sausage Vegetable Skillet, fresh summer vegetables, turkey kielbasa, and shrimp layered in a skillet with a sprinkle of spicy!  Who says healthy can't be delicious?  If you are looking for a low carb meal that takes literally 20 minutes to make, then you are in luck.  An added bonus is all the fresh vegetables in this recipe is in season right now.  Summer never looked so good or should I say, Tasty! haha! I love all the gorgeous color in this Southern Shrimp Sausage Vegetable Skillet one pot meal.  An easy colossal one pot meal.

Southern Fried Green Tomatoes, crispy on the outside tender and meaty on the inside, yielding a tangy sweet flavor like no other.  Serve them stacked as a delightful appetizer or an elegant side dish. It is time for Fried Green Tomatoes!  Summer is synonymous with Fried Green Tomatoes in my neck of the woods.   Right now we are in the middle of fresh garden vegetables appearing in Farmer's Markets and some local grocery stores.  I must say the first thing I check for in my local grocery is if they have any green tomatoes.  Last year they kept coming in the store until late September here in Texas.     I only buy a few green tomatoes at a time to make sure that they are nice and firm when I get ready to fry them. I like to pick out firm green tomatoes and some that are a little pink.   They are the ones that are just starting to show some ripeness, sweeter yet still tangy in taste too.   It is just a preference.

No Churn Peach Cobbler Ice Cream

No Churn Peach Cobbler Ice Cream,  fresh peach cobbler pieces folded into a leftover homemade creamy vanilla ice cream recipe, one irresistible frozen dessert. Do you like Homemade Peach Cobbler with a Double Crust?   How about Peach Ice Cream?  It gets even better, how about No Churn Peach Cobbler Ice Cream?    We are especially fond of a big scoop of homemade vanilla ice cream over a warm bowl of homemade peach cobbler.  This is how it goes, while the peach cobbler is baking, we are making a freezer of homemade vanilla ice cream, epic! Depending on how many are at our house when we make it, I will freeze any leftovers.  The same goes for the peach cobbler.  If it is just Jim and me, we always have peach cobbler leftover.

American Flag Pie with Homemade Pie Crust

American Flag Pie,  is made with a homemade pie crust that brings this pie to a rich balance of buttery flakiness as well as a luscious sweet-tart taste of homemade pie filling.    My Mother taught me long ago that a pie is only as good as the crust.  There is some high quality ready made pie crust in the stores today, but when I was growing up, that was not the case. I learned to make pie dough from my Mother and perfected it in my Home Economics class in high school. I recommend making a homemade pie crust if at all possible.  For the American Flag Pie recipe, I use one of my favorite pie crust recipes.

Sometimes I just want to cook outside the box.  When I think steak, I think grilled steak, baked potatoes, and a nice side salad.  Steak Bites are definitely outside the box. You might think outside the box means labor intensive, lots of ingredients, and expensive ingredients.  Not Steak Bites!

Green Bean Bundles just go with our fancy menu. The Green Bean Bundles are so easy to put together, but they are very time consuming when you need to make enough to serve a large crowd.   Who doesn't love the flavor of bacon wrapped around a bundle of green beans, and a combination of brown sugar, butter, salt, and Worchester sauce poured over them and baked to perfection?

King Ranch Chicken {The Perfect Casserole}

King Ranch Chicken, tortillas, chicken, peppers, creamy sauce layered together in this Classic Southern casserole.  You might say King Ranch Chicken is the perfect casserole! King Ranch Chicken is a family favorite.  It's probably the best combination of Mexican flavors in a casserole of all time.   My family adores this casserole.  My recipe for King Ranch Chicken is one of those recipes that feed an army.  You can make two pans.  Most of the time, if I am making a casserole and going to the trouble of chopping and mixing.   Why not make two?

Skillet Creamy Mustard Chicken , chicken thighs smothered in a creamy sauce made with chicken broth, a little heavy cream, whole grain mustard, and avocado oil.   Simple low carb idea. Looking for another tasty chicken recipe?  Have I got one for you?  We are a huge fan of bone-in chicken thighs anyway you cook them.  But these creamy mustard chicken thighs are my favorite.   The chicken thighs are patted dry, seasoned and brush with a portion of the grainy mustard on the chicken before cooking.

Old Fashioned  New Potatoes and Peas , sometimes called Southern New Potatoes in a White Sauce.  There is one thing for sure about this recipe for New Potatoes, and English Peas smothered in a creamy white sauce, it has been around for ages.  My Mother passed it down to me, and her Mother passed it down to her, tried and true recipe. The first vegetable I want to eat in the spring from our garden growing up is new potatoes and fresh English peas. Mother would wash and scrap the new potatoes, slice them, or you can also quarter them if you like a chunkier potato.  While the potatoes are cooking, she makes the white sauce. I want to let you know I use leftover new potatoes at times to make a leftover makeover dish.  Especially in the summer when new potatoes are plentiful from the garden.  Boil the potatoes and eat them with butter and fresh herbs refrigerate the leftovers and then the next day use them to make New Potatoes in a White Sauce. Weeknight Family Supper Meal: #4 Salmon Croquettes

Weeknight Family Supper Meal , an inspiration for a meal one night of the week that may include ideas how to make part of the meal ahead, how to freeze any leftovers or how to make leftovers into a makeover for another meal.   Most people don't know how easy it is to make salmon croquettes.  Mix up a few ingredients, mince onions, egg, and seasoning in a bowl, roll them into small little rolls, roll them around some saltine cracker crumbs and fry in oil.  Voila, salmon croquettes.   See how easy, and oh! so delicious.  Perfect for a weeknight meal.

Southern Fried Cabbage with Kielbasa, LTYB, Low Carb, Gluten Free

Southern Fried Cabbage with Kielbasa , is a quick and easy one skillet meal for a busy weeknight supper.  Delicious, satisfying, and inexpensive, who could ask for more? Fried Cabbage is a regular side dish around our supper table.  Jim loves cabbage period, and so do I.  We usually add some kind of cabbage dish to our meal rotation two or three times a month.    Cabbage is low carb and has healthy nutrients and fiber.  It can be fried in different fats all the way from rich bacon fat to healthy avocado oil which is what I cooked it in this time. Although, I really like to cook cabbage in bacon fat we are trying to eat healthy these days so for this recipe I started the dish by cooking some thickly sliced turkey kielbasa chunks.
