Weeknight Family Supper Meal: #4 Salmon Croquettes

Weeknight Family Supper Meal is an inspiration for a meal one night of the week, offering ideas on how to prepare part of the meal ahead, how to freeze any leftovers, or how to repurpose leftovers into a new meal.  


Most people don't know how easy it is to make salmon croquettes.  Mix up a few ingredients, mince the onions, egg, and seasoning in a bowl. 

Roll them into small balls, then roll them in saltine cracker crumbs and fry in oil.  Voila, salmon croquettes.   See how easy, and oh! so delicious.  

Perfect for a weeknight meal.

I usually serve French fries with salmon croquettes, but sometimes I like to change it up and roast sweet potatoes instead.   This way, the sweet potatoes can be roasting while I fry the croquettes.  

Like they say, kill two birds with one stone.  

To balance out the meal, I like to serve a sala,d preferably a marinated salad.  It complements the music of the meal, with savory, sweet, tangy, and delicious flavors.  

The best part of making a marinated salad is it can be made ahead, even two or three days ahead.  

How much better can it get for getting a quick meal on the table?

For a dessert, I make a quick sugar cookie. Is there such a recipe?  Well, sugar cookie bars are the bomb!  

You cream all the ingredients together and spread the dough into a rimmed baking sheet pan and bake.  

These can also be made ahead and frosted just before supper.  Change the color of the frosting to match the time of year.  

With Valentine's around the corner, the cookie bars would be perfect for your sweetie, just a thought!
