Canadian Bacon & Gruyere Egg Cups, three ingredients come together to make a simple but fancy breakfast recipe to serve for special occasions or weekend brunch.


These Canadian Bacon & Gruyere Egg Cups are great if you are on a low carb, keto, or gluten free eating plan.  The Canadian bacon is lower in calories than bacon making them weight watcher friendly too.  

The Canadian bacon is crispy around the egg whites with the egg yokes runny, making them inviting to dip with toast strips.  



On weekends when all the family is here, I like to make big pans of breakfast foods, so everyone gets to eat at the same time.

I love to make the Canadian bacon & Gruyere Cups with a pan of country potatoes and a bowl of fresh fruit salad.

WHAT YOU WILL NEED TO MAKE CANADIAN BACON & GRUYERE EGG CUPS


  • 12 cup muffin pan

  • Canadian bacon

  • Eggs

  • Gruyere Cheese

  • Coarse black pepper

  • Coarse salt or finishing salt

  • Chopped herbs (optional)


HOW TO MAKE CANADIAN BACON & GRUYERE EGG CUPS


  • Heat oven to 400 degrees F.  Spray a 12 cup muffin tin generously with a nonstick cooking spray.

  • Press and arrange a slice of Canadian Bacon at the bottom of each muffin well.  Bake for 10 minutes.  Remove from the oven.

  • Sprinkle a tablespoon of shredded gruyere cheese over the baked Canadian bacon.

  • Carefully crack an egg over each of the Canadian bacon cups.  Season with a little coarse black pepper.

  • Reduce the oven temperature to 325 degrees F.  Put the Canadian bacon cups back into the oven and bake 15 minutes, more or less, depending on your preference in how you like your eggs.

  • Sprinkle with coarse salt or herb finishing salt.

  • Garnish with chopped fresh herbs. (optional)

  • 12 Eggs
  • 1 cup Gruyere Cheese
  • 1 teaspoon Coarse black pepper
  • 1 1/2 teaspoon Coarse salt or finishing salt
  • 1 tablespoon Chopped fresh herbs (optional)
