Celebration Fruit Salad Made With A Quick Homemade Strawberry Pie Filling

Celebration Fruit Salad, fresh pineapple chunks, fresh strawberry slices, and fresh blueberries tossed all together in a strawberry pie filling, homemade or canned.    Light and fresh...who says it can't be for dessert!  


The night before any celebration we are having, I make Celebration Salad.  I like another quick fruit salad I make from my childhood using canned fruit, but this is our favorite.

I try to use fresh fruit as much as I can.  Especially now, while the strawberries, pineapple, and blueberries are in season.  

We have some that are not a fan of bananas in this salad, so we leave them out but feel free to add them along with any other fresh fruit.  I think Kiwi and grapes would be another delicious addition or even peaches.  

If you add peaches, a homemade peach pie filling is a great combination.



Oh, the list could go on and on, but you make it your recipe with your own additions.  

The homemade pie filling for this salad is so easy to make.  

Take a cup of fresh strawberries cut in half, or if using fresh peaches, slice them.  Cook the fruit in a cup of water with sugar mashing them as you stir.  

Add the rest of the strawberries, lemon juice, and a slurry of cornstarch and water.   Add some vanilla and keep stirring until the mixture is clear and thickens.  Set the mixture aside until completely cooled.  

See how easy it is to make the homemade pie filling.  I must say I sometimes use canned pie filling too.  It is still just as good.  

The secret is to add the vanilla to the homemade or canned pie filling.  Don't skip. 


WHAT YOU WILL NEED TO MAKE CELEBRATION FRUIT SALAD

  • Medium saucepan
  • Fresh strawberries
  • Fresh pineapple
  • Fresh blueberries
  • Sugar
  • Cornstarch
  • Lemon juice
  • Vanilla
  • Large knife
  • Large serving bowl
  • Large spatula
  • Canned strawberry pie filling (if not making homemade)

HOW TO MAKE CELEBRATION FRUIT SALAD

  • If making homemade pie filling, use the instructions below.  

  • In a large saucepan,  add one cup of water, lemon juice and 1 cup of strawberries diced and sugar.  Bring to a boil over medium heat, stirring often.  Cook for about 2 minutes.

  • In a small bowl add the cornstarch and a 1/2 cup of water.  Stir together until mixed well making a slurry.  

  • Pour the slurry mixture slowly into the sauce mixture while the mixture is boiling, stirring constantly.  Cook for another 1-2 minutes until the mixture is clear and thicken. 

  • Remove from the burner and add a cup of halved strawberries and vanilla.  Stir coating all the strawberries with the sauce; set aside to cool to room temperature.  

  • The pie filling can be refrigerated at the point if making the fruit salad later.

  • In a large bowl, add sliced strawberries, pineapple chunks, and blueberries.

  • Add the pie filling (homemade or canned) to the fruit and gently fold with a large spatula being careful not to break up the fruit. 

  • Serve immediately or refrigerate for later.



We absolutely love this Celebration Fruit Salad.  The perfect fruit salad for any season of the year.  It can be served cold or room temperature, making it easy to take to potlucks and picnics.

  • 3 quarts fresh whole strawberries
  • 1-quart blueberries
  • 1 whole pineapple, cut into 1/2 inch chunks
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 1/2 cups water
  • 1 teaspoon vanilla

  1. If making homemade pie filling, use the instructions below.

  5. Add  2 cups of halved strawberries and vanilla. Stir coating all the strawberries with the sauce, simmer for 1 minute or until the strawberries start to soften; set aside to cool to room temperature.
  6. The pie filling can be refrigerated at this point if making the fruit salad later.
  7. To make the fruit salad.  
  8. In a large bowl, add 2 quarts of sliced strawberries, pineapple chunks, and blueberries.
  9. Add the pie filling (homemade or canned) to the prepared fruit and gently fold with a large spatula being careful not to break up the fruit.
  10. Serve immediately or refrigerate for later.

NOTES:

If you are using the canned pie filling, don't forget to add the vanilla. If the pie filling sets up to thick, just add a little water to thin it out. Remember pie filling is thick and will thin out when mixed with the fruit.
