Pears rarely get center stage over apples and pumpkins in the fall, but for me, they sing fall.  Roasting fruit is a purist way to dress up fruit for dessert or accompaniment to other dishes.

As much as I like pears, I do not wish to mask the pure flavor of the pear with a lot of other intense flavors.  When I eat pears, I want to taste pears.

The subtle flavor of pears intensifies in the heat of a hot skillet becoming almost melting and positively silky in taste, marvelous!

Starting off browning the pears in a hot cast iron skillet seals in the flavors of the pear, keeping the cinnamon, sugar, and butter from taking away from the star of the dish.  

Then place the skillet in the oven to amp up the best of the fruit while the cinnamon, sugar, and butter do its magic.

While the butter brings a richness and lusciousness to the sauce and the cinnamon sugar quietens the tastes to complement the pears, making the sauce work well with a dollop of yogurt or like my grandchildren add a big scoop of vanilla bean ice cream.  Watch them dig in and devour these pears.

If you want to get fancy, take a few more minutes and make an incredible maple whip cream, scrumptious.  

Although, it doesn't matter what the occasion or the guest the Roasted Cinnamon Pears can stand alone in all there glory.

WHAT YOU WILL NEED FOR THE RECIPE

  • Cast iron skillet
  • Knife
  • Pears
  • Sugar
  • Cinnamon
  • Salt
  • Butter
  • Avocado oil

How TO PICK PERFECT RIPE PEARS

  • The portion of the pear nearest to the neck closest to the stem will give a little if the pear is ripe.  
  • Keep the pears on a kitchen counter to ripen checking every few days until they soften.
  • Pears also soften when cooked so firm pears will soften in the oven when baked.
  • Softer pears are ideal for eating fresh.

Pear Salad



Yield: 4-6

ROASTED CINNAMON BUTTERY PEARS

Simple dish showcasing the straightforward flavor of pears.
prep time: 5 minscook time: 25 minstotal time: 30 mins

ingredients


  • 3 medium pears, cut in half lengthwise and cored
  • 1 tablespoon avocado oil
  • 2 tablespoons butter
  • 3 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2-1 teaspoon cinnamon

instructions


  1. Preheat oven 400 degrees F.  Heat avocado oil in cast iron skillet until hot but not smoking.  Add the butter and swirl around until is melted
  2. On a platter, lay pear halves cut side up.  Sprinkle with sugar, cinnamon, and salt evenly over the pears; set aside.
  3. Place the prepared pears cut side down in the butter mixture.  Saute them for 2 minutes spooning butter mixture over the top of the pears and they saute.  
  4. Place cast iron skillet with the pears in the oven and roast for 20 minutes.
  5. Spoon the pan sauce mixture over the pears and cook for 5 more minutes.
  6. Remove from the oven and spoon pan sauce one more time. 
  7. Serve warm with a dollop of ice cream or yogurt.  Spoon some of the pan sauces over the pears and ice cream.  

NOTES:

I leave the peeling on the pears, but feel free to peel them if you prefer.

The pears may be served warm as well as room temperature.
