Weeknight Family Supper Meal is an inspiration for a meal one night of the week, offering ideas on how to prepare part of the meal ahead, how to freeze any leftovers, or how to repurpose leftovers into a new meal.  

Casseroles are a favorite at our house, especially those that can be made ahead, stored in the fridge, and then popped in the oven when it's time to cook supper.  

If a buttery topping is sprinkled on top, as this casserole has, leave it to sprinkle just before baking.  Look out for the leftovers.  

We love this casserole almost better the next day.  It is scrumptious.  

Did I say it is not like your typical casseroles?  The ingredients may surprise you.

While I make the casserole the day or two before, I love to put a pot of collards on the stove to cook low and slow.  

They make a perfect side dish or even a main course, especially when paired with a pan of cornbread.

There are so many recipes to use leftover collard greens.  Here are a few.

Fried apple pies are just the dessert to finish off this delicious meal, but most of the time I do not want to make the dough or even roll out biscuit dough.  

The method I have found is to make crispy hot apple pies with egg roll wrappers.  

They super fast to make and really taste better the day you make them so fry a few for just a little indulgence after a delicious meal.
