Buffalo Chicken Bites

Buffalo Chicken Bites, mixture of chicken, cream cheese, spicy hot sauce, ranch dressing mix, baked between crescent rolls sheets.  They are a cross between a slider and hot sandwich.


The best place to enjoy the most scrumptious appetizers, dips, sliders and sweet treats is at a Supper Bowl Party!


Each year we have pretty much the same type of food variety for our Super Bowl Party.  We always have the same type of food but different recipes.  For instance, we have sliders, several dips, two or three different kind of wings.  One thing does stay the same, and that is we always have Lunch Lady Brownies and Southern Pecan Chewies.  


We love buffalo chicken in any form.  From making Buffalo Chicken Wings to serving it up in a dip.  Last year after making the dip and just before I placed it in the oven, I thought about spreading it out over a layer of crescent dough.  I took another layer of crescent dough and covered it and pinched the edges.  Placed it in the oven and baked it for 20-25 minutes.  It baked up so pretty, golden brown.  I cut it into small squares and served them with Ranch Dip and Blue Cheese Dip.  

These Buffalo Chicken Bites are a cross between a slider and hot sandwich.  The buffalo chicken mixture can be made ahead of time and baked between the crescent dough just before everyone arrives for the party.

Buffalo Chicken Bites

Ingredients:
    2 cans (8 oz) Pillsbury seamless crescent dough
    1 (12 oz) can chunk chicken, drained (or 1 1/2 cups rotisserie chicken)
    1 (8 oz.) package cream cheese, softened
    1/2 cup Frank's Red Hot Sauce
    1 oz. dry ranch dressing mix
    1 cup cheddar cheese, shredded
    1/2 cup blue cheese, crumbled (optional)
Directions:
Heat oven 375 degree.  In a bowl add chicken, cream cheese, hot sauce and dressing mix. Mix until all is incorporated well; set aside.

Unroll one can of crescent dough and place on a baking sheet.  Spread the chicken mixture evenly over the dough.  Sprinkle with 1/2 cup cheddar cheese and blue cheese if using.

Unroll remaining can of crescent dough.  Place on top of the chicken mixture layer.  Pinch and seal edges.

Place in the oven and bake for 20-25 minutes or until golden brown.  Cool 15 minutes.  Cut in squares and serve immediately.  

Serve with Ranch Dip or Blue Cheese Dip.
