Reese's Peanut Butter Cup Cookies using Pillsbury refrigerated dough!

Peanut Butter Cup Cookies look fancy but they are far from being complicated cookies. My Mother made these when I was growing up, especially at Christmas. They still remind me of the times we spent together in the kitchen during the holidays. I have continued to make them for my own family through the years and they have become a favorite cookie for our Christmas Gift boxes. 

Sometimes, I make these with a recipe of homemade peanut butter cookie dough. To save time during the rush of the holidays, I prefer using refrigerated Pillsbury Peanut Butter Cookie dough. I slice it into 24 cookies. Roll each slice into 1-inch balls, press a mini Reese's Peanut Butter Cup in the center of each and bake. It is that easy!

This two ingredient recipe still looks fancy, but leaves me time to make many more Christmas treats without being stuck in the kitchen all during the time when everyone else is having fun. 

Peanut Butter Cup Cookies 
    1 roll (16.5oz) Pillsbury refrigerated peanut butter cookies
    24 mini Reese's Peanut Butter Cup candy, unwrapped
Preheat oven to 375 degrees F. Coat mini muffin pan with cooking spray, set aside. Cut dough into 24 portions and roll into 1-inch balls. Place a dough ball in each cup of the muffin pan. 

Press one mini peanut butter cup candy in the center of each dough ball. 

Bake for 10-12 minutes. 

Allow to cool for 15 minutes before removing from pan. 

Cool on wire rack for 30 minutes before storing in air tight container. I hope you get to make some of these for your guests to enjoy. They are delightful and sure to become a classic Christmas family treat. Enjoy!
