Huevos Fajitas Taco

My husband loves eggs and biscuits or toast for breakfast.  He always request fried eggs, but my favorite are scrambled. I love to change it up a little with scrambled eggs by adding ingredients I have leftover from previous dishes I have made.

This last weekend, in the fridge I had leftover chopped bell peppers, chopped red onions, diced tomatoes, and grated cheese.  Sounds like ingredients for fajitas--you guessed it!  We had chicken and beef fajitas the night before so why not make Huevos Fajitas Taco!


Perfectly scrambled eggs are pretty tasty, not to mention a simple breakfast food, but when they are added to another scrumptious dish they become extravagant.

The next morning at the last minute I decided to pile all the leftover ingredients in a couple tablespoon of butter in a hot iron skillet and saute them until all the ingredients are heated.  

The eggs are added to the steak mixture and  are all cooked together fajita style then pile it all into a warm flour tortilla spread with a generous amount of guacamole.  

The breakfast was absolutely scrumptious.

We are huge breakfast for dinner fans, and have it often so I think these will be added to our menu rotation.

Huevos Fajitas Taco

2-3 tablespoons butter or canola oil
1/2 cup onion cut into strips (I had chopped on hand)
1/2 cup red bell pepper cut into strips (I had chopped on hand)
1/2 cup diced tomato
1/2 cup chicken fajita cooked
1/2 cup beef fajita beef
4 eggs
salt and pepper to taste
4 smallflour tortillas
1 cup guacamole
1/2 cup shredded cheese

Heat butter in a skillet until melted.  Add onions and bell pepper.  Saute until vegetables are tender.

Add tomatoes and stir until incorporated.  Add eggs one at a time.  Cook eggs stirring gently until eggs are done.  Salt and pepper to taste.

Warm tortillas in microwave for 20 seconds.  Spread with guacamole in the center of the tortillas, spoon egg mixture on top, sprinkle with shredded cheese.


The following are additional toppings to add:

pico de gallo
sour cream
sliced jalapeƱos
