Shepherd's Pie with Garlic Mash Potatoes
Original Cooking with K Recipe
- 1 1/2 lbs. lean ground beef
- 1/2 medium onion, minced
- 1/2 medium bell pepper, chopped finely
- 1 egg
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon coarse-ground pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground red cayenne pepper
- 4 large russet potatoes, cubed
- 4 green onions, sliced thin
- 1/4 cup butter
- 1/2-3/4 cup milk or half and half
- 1 tablespoon minced garlic
- 6 slices of American Cheese
- 1 cup cheddar cheese, grated
Preheat oven to 375 degrees F. In a large bowl, add lean hamburger meat, onions, bell pepper, eggs, and milk. Mix well. Add salt, ground pepper, coriander, garlic powder, and cayenne pepper. Mix well.
Press the meat mixture into a large pie plate, pushing the meat up on the sides to form a crust-like. Bake for 35-40 minutes or until done. While the hamburger is in the oven, prepare potatoes.
Place potatoes in a medium saucepan; cook on medium-high heat until fork-tender. Add butter and milk; mash until creamy and smooth. Add green onions and garlic. Stir mixing well. Salt to taste.
When the hamburger is done, lay sliced cheese evenly on top. Spoon mashed potatoes over the sliced cheese and top with 1 cup of cheddar cheese.

Return to the oven for 20-30 minutes, or until the potatoes are golden and the cheese is bubbly. (Sometimes I put it under the broiler for 10-15 minutes). Serves 6-8.
