Miss Kay's Heavenly Rolls, my family affectionately calls my homemade rolls, pillows of pure heaven.  They make an appearance at all our family dinners.


Mom's Heavenly Dinner Rolls


Heavenly Rolls  are soft and airy, similar to a dinner roll, but the addition of baking powder gives them the structure of a sturdy biscuit.  


Yesterday, my grandson turned 13. I can't believe I have a teenage grandson and one who is taller than me.

I was delighted and honored when he asked me to cook his birthday dinner. I asked him what he wanted me to cook for his dinner, and he said, "Steak and baked potato. Wow."   

I told him, "You sound just like your Grandpa. He would have picked the same thing." (grin) It is a fitting meal for a grandson who has just crossed over a milestone in his life.

To surprise him with an added touch to his meal, I decided to make my Heavenly Rolls, which he is so fond of.

Some time back, I bought some cookie cutters with each grandchild's first initials, with the idea of making sugar cookies with them. 

I thought they might be great for making his meal a little more personal. As you can see, they turned out fantastic. Happy Birthday, Elijah!

TIPS AND TIDBITS FOR THE BEST HEAVENLY DINNER ROLLS


Flour.  All-purpose flour is best for this recipe.

Shortening.  Use quality cold Shortening so the fat releases properly when baking.  The biscuits will spread on the bottom and have a mushroom effect on the top.  If the biscuit dough gets warm while cutting them out, place the pan of biscuits in the oven while the oven preheats.

Yeast.  Ensure your yeast is fresh and active, not past its expiration date.  Make sure the yeast is mixed with water at the right temperature, 105-115 degrees F.

Do not overwork the dough.  Handle the dough lightly, pressing it down to flatten it. Avoid using a rolling pin.

Biscuit cutter. I recommend using a 2 1/2-inch cutter for biscuits and a smaller one for tea biscuits. Always push down and lift straight up, avoiding twisting. Twisting seals the edges and prevents the biscuits from rising when baked.

Rising. Make sure the biscuits rise in a warm environment. Otherwise, they will not rise properly and will not rise when baked.

Do not overbake.  It only takes 15-20 minutes to bake the biscuits.  Do not walk off while baking.  It is better to underbake them than overbake them.  Check them at the 15-minute mark and go from there.

WHAT YOU NEED TO PREPARE HEAVENLY DINNER ROLLS


Whole milk
Flour
Salt
Baking powder
Sugar
Solid vegetable shortening (I use Crisco)
Butter

HOW TO PREPARE HEAVENLY DINNER ROLLS


Preheat oven to 400 degrees F. Pour milk into a 2-cup measuring cup and heat in the microwave on high for 1 minute, or until warm but not hot; add yeast and stir until well combined; set aside, stirring occasionally.

In a mixing bowl, using an electric mixer with the paddle attachment, mix 5 cups of flour, salt, baking powder, and sugar until well blended.

Remove the paddle attachment and attach the dough hook. Cut in shortening until mixture resembles coarse meal.

Stir the yeast and milk mixture well, then add it to the flour mixture, beating on low with a dough beater until the dough forms a ball and loosens from the sides of the bowl.  If the dough does not loosen, add 1/2 cup of flour.

Turn the dough onto a lightly floured surface and roll it out to 1/2-3/4-inch thick. Cut rolls out with a 2-inch cutter.   I use a glass sometimes.  Just whatever size you want your rolls.

Place cut rolls on a lightly greased baking sheet. Cover and let rise for about 30 minutes.

Bake for 15-20 minutes or until lightly golden brown. Remove from oven and brush with melted butter.
