Leftover Ham and Bowtie Pasta

This Leftover Ham and Bowtie Pasta dish is made with some simple ingredient you probably have on hand.  It is a light and refreshing dish, and the peas add a nice sweet touch to the dish.
On special occasions we usually have two meat dishes with ham being one of them, and there are rarely any leftovers. We have teenage grandsons and some big eater around our house when we all get together so I intentionally cook plenty to have leftovers the next day.  My husband and I have always enjoyed eating leftovers.  It is not only thrifty to do so, it is a time saver to have something you can quickly put in the oven or warm up in the microwave.   If you are not going to use the ham the next day, you can easily separate out portions for different recipes and put in freezer bags for another day.  Ham can be frozen up to 6 month before cooking it.

We really enjoyed this dish the next day.  Hope you will try this recipe the next time you have leftover ham also.  Enjoy!
Leftover Ham and Bowtie Pasta

1 pound dry Bowtie Pasta
Salt and Pepper
3 tablespoons butter
1 onion, diced
10 oz. (2 cups) frozen English peas
1 cup half-and-half
1/2 pound (1 1/2 cups) cooked ham, cubed (Ham steaks at the grocery store works great also)
1/2 cup grated Parmesan cheese

Cook pasta according to package directions.  Drain and set aside.  Heat butter in a saucepan over
medium heat.  Add onion; cook, string until soft, about 3 or 4 minutes.

Add peas and half and had; season with salt and pepper to taste.  Simmer until thickened, about 3 or 4 minutes.

Add ham to sauce; cook until heated throughly, about 1 to 2 minutes.  Add pasta and toss all together.

Serve with Parmesan cheese.

Cook's Note:  If you don't have leftover ham, buy ham steaks.  They work great!
