We love a Sunday family style dinner when we have our children join us for lunch. Especially like this past Sunday, on the table, Sunday Pot Roast , Light Bread and Gravy, Long Grain Rice, Lima Beans, Sliced Tomatoes and Onions, and Cauliflower Rice Coleslaw.

The recipe starts with traditional ingredients like green beans, green peas, and shoepeg corn. Chopped celery, red onions, and red bell pepper add some crunch. To bring the magic, toss all of it together with an oil and vinegar dressing.

Sheet Pan Supper , means simple preparation, simple cooking, and the best, simple clean up. A complete meal is put together by roasting a whole meal together in one sheet pan. This has to be one of my favorite meals in a long time. I just recently discovered roasted radishes and turnips. I knew they would be a great addition to this sheet pan supper. My husband is a fan of country pork ribs, so we decided to go with it for a simple supper idea. We just happened to have brussel sprouts in the refrigerator too so we added them.

Creamy White Chocolate and Coconut Milk Fruit Salad , drained fruit cocktail, peach chunks, pineapple chunks, and mandarin oranges all folded in a mixture of instant white chocolate pudding and coconut milk. Serve it as a salad or serve it as a dessert like we do most of the time. I have seen recipes for this fruit salad in many variations. Although I have made most of them, my husband decided this one is his favorite.

Black Pepper Corn Muffins , Southern cornbread muffin using creamy corn folded into self-rising cornmeal and coarse ground black pepper with eggs, and a small amount of buttermilk to bind it all together. Many a meal when I was a girl growing up consisted of a plate of summer vegetables and cornbread. Some people think that this meal is a poor man's meal, but for us, it was spectacular. Add some sliced garden tomatoes and garden onion, a little chow chow (a southern relish) and we were in heaven.

I only remember my mother using the green bell peppers, but the different colored ones are so readily available now that I usually use them along with some green ones too. Cabbage Roll Skillet Casserole , made on top of the stove with all the ingredients of the traditional cabbage rolls with a low carb option using cauliflower rice. Traditional cabbage rolls take time to make. You boil the cabbage leaves and then roll the leaves up with meat and rice mixture. They are truly delicious and worth every minute making them, but sometimes I just want them to make themselves...grins.
