Kay's Swiss Steak

Swiss Steak ,  inch-thick round  steak tenderized,  browned and then cooked low and slow in a sauce of tomatoes, onion, garlic, and herbs. When I think of comfort food, Swiss Steak is first on my list. With buying an economy pack of round steak last week for my Stuffed Round Steak , I had enough left to make this excellent  Swiss Steak .

Pumpkin Pie Flan

Pumpkin Pie Flan, Mexican dessert with a pumpkin flair, creamy smooth and the perfect ending to any meal. Flan is a traditionally a Mexican dessert, and there are many versions. The Pumpkin Pie Flan sounded so good to make for this time of the year.

Baked Apple Delights

Poached Apples , baked in a lovely bath of apple cider that simmers into a wonderful syrup.  Serve them stuffed with glazed pecans, hot or cold with a dollop of whipped cream. When buying apples for my Crockpot Apple Butter, Apple Pie Fritters , and for my husband who eats an apple a day, I decided to make some Poached Apples. I served these at one of the catering events I hosted.  We made 250 of them.  You would think I never wanted to see them again, but they were such a hit I decided to make a batch for my husband.

Chocolate No Bake Cookies , America's favorite for years, children and adults alike have an affection for chocolate, oatmeal, peanut butter, and cocoa melted and swirled together into a no bake cookie. One of the first cookies I ever learned to make was Chocolate No Bake Cookies . I remember mother would make these cookies, and there were enough of us to eat the whole batch in one sitting.

Stuffed Round Steak

Stuffed Round Steak, boneless round steak rolled up with a breadcrumb mixture of herbs and seasonings.  This dish is an incredibly flavorful main dish that can be served for any fancy dinner party or the humblest of guests.  This is a great recipe to serve for Thanksgiving if you are not a fan of turkey! In 1981, I entered a cooking contest on a local TV show, P M Magazine, that came on each night after the evening news. As I am writing this blog post, I am thinking about the economy as it was in the 80's, as in comparison to today's economy. The unemployment rate was high, and jobs were also hard to find.

My daughter always chooses chocolate cream pie as the first dessert when we go to Luby’s. This pie is a copycat of the Luby’s Cafeteria.

Fresh Apple Cake With Apple Cider Glaze

Fresh Apple Cake is made with three different variety of apples.  After using different kinds of apples in this recipe over the years, I have found that the Granny Smith apples work best along with Gala, Honey Crisp or Fuji.
