Who would have thought a cookbook solely about biscuits would grab such an interest in me.  Nathalie Depree's Southern Biscuits cookbook did just that.   You can find every biscuit imaginable, from the traditional ones all the way to the outlandish ones.  She goes into great detail on all the ins and outs of making the perfect biscuit.   I have always been a big fan of her in her television days on PBS in the '80s, not to mention all of her many cookbooks.  You could say she is my all time favorite Southern cook.

Quick Bread is one of the first things that I learned to make in my first year of Home Economics.   I have to say, Home Economics was always my favorite class in high school, and interestingly enough, that class has undergone numerous name and status changes since then.   Like the cooking part---the class I took is now totally separate and called Culinary Arts Class.  Historically, the class was mostly women, but with the surge in the culinary field, that has changed.

Coconut Banana Bread

I could make Coconut Banana Bread every day.  It has become one of my personal favorites.  I think it is the combination of the coconut, bananas, and butter that makes it so moist and yummy. Any Banana Bread recipe I come across, I am going to jump on it. That is exactly what happened with this recipe. A sweet friend of mine gave me a recipe for banana bread that does not call for any milk, sour cream, yogurt, etc. I have never seen a recipe that didn't call for some sort of dairy product. I couldn't wait to try it, and I am here to tell you that this is the moistest Banana Bread ever.

Traditionally, sweet cornbread contains equal portions of flour and yellow cornmeal with a liberal amount of sugar.  There is one thing that has not changed since I came into the family and that is my affection for a late night snack of a cold glass of Milk and Cornbread.
