Hobo Dinners are the perfect meal to make on a busy weeknight.  The hamburger, potatoes, carrots, celery, and onions are all cooked in a foil packet, making clean up virtually nonexistent.

To change things up, sometimes I add a wedge of cabbage.  Season each layer of vegetables to keep the whole meal flavorful. 

The Hobo Dinner can be made the night before and placed in the refrigerator. Set it out an hour before cooking.

The Hobo Dinners are a meal all by themselves, but I like to serve them alongside crusty bread or perhaps some Red Pepper Flake Seasoned Crackers.

These Red Pepper Flake Seasoned Crackers add a spicy flair and help enhance the flavor of all the food on your fork.  The crackers can be made a day or two ahead and kept in an airtight container.

For a quick dessert, the Creamy Peach Cobbler will not disappoint.  While the Hobo Dinners are cooking mix up the cobbler.

All you need for the cobbler is frozen or fresh peaches, sugar, heavy cream, a package of sugar cookie mix, and melted butter.

This is the easiest cobbler to make.  Layer the peaches on the bottom and add the other ingredients in the order listed.  Bake for 30-40 minutes.  Don't forget the ice cream, although the cobber is superb without it.
