White Cheddar Cheese Stuffed Celery


This platter of White Cheddar Cheese Stuffed Celery is another stuffed celery recipe that I served along with Chipotle Cheddar Cheese Stuffed Celery, and Ham Rolls at a reception that my sister had to honor volunteers in the community. It has become a favorite everywhere I take it. It can easily be used for a vegetable dip by just adding a pint of sour cream. Another good hint is to always peel your celery before stuffing it to eliminate the stringiness.

White Cheddar Cheese Stuffed Celery

8 stalks of celery, leaf and ends cut off
8 oz. white cheddar cheese
8 oz. cream cheese, softened to room temperature
1 1/2 -2 cumin
1-1/2 cups mayonnaise
4 oz black olives, coarsely chopped
1/4 cup fresh chives, finely chopped

Using a vegetable peeler, peel the celery ribs so they sit flat; Set aside. Hand shred the Cheddar cheese and put in the bowl of a food processor fitted with a steel blade, add the cream cheese and cream all together until creamy and smooth. Remove lid and sprinkle cumin in and add mayonnaise and blend until creamy. Transfer mixture to a medium bowl and fold in the black olives gently not to mash them. Fill the celery stick and slice 2 inches long. Garnish with chives.
