Brown Sugar Pumpkin Pie Bars are an elegant pumpkin pie in a simple dessert bar. They're an excellent  way to serve dessert at family gatherings, bridal showers, and even tailgate entertaining.  SUPER EASY PUMPKIN PIE BARS We like  rich, creamy, sweet  Pumpkin Pie , which is just what these pumpkin pie bars are. I dressed up a traditional pumpkin pie recipe by adding nutmeg, pumpkin pie spice, and brown sugar instead  of regular sugar.   I am a little anxious for fall to arrive, so I will start with a pumpkin recipe.  Pumpkin is synonymous with fall, so much so that we embrace the humble gourd in the squash family as a superfood, low in calories and high in fiber.  That works for me because I love pumpkin anything!

Cauliflower Rice Coleslaw ~ Makeover Leftovers

Cauliflower Rice Coleslaw , beautiful and healthy salad made with cauliflower crumbles, coleslaw mix, and a sweet, tangy dressing.  The perfect salad to celebrate the coming of the end of summer.   We love a Sunday family style dinner when we have our children join us for lunch.   Especially like this past Sunday, on the table, Sunday Pot Roast , Light Bread and Gravy, Long Grain Rice, Lima Beans, Sliced Tomatoes and Onions, and Cauliflower Rice Coleslaw.

Spicy Cabbage & Onion Steaks

Spicy Cabbage and Onion Steaks ,   a simple, fast and delicious humble vegetables that will wow any dinner guest.  Roasted in the oven thick cabbage and onion slices to perfection. My family is a huge fan of cabbage, and I was thrilled for another recipe that uses cabbage.  We like our cabbage sauteed with bacon and onions , so this is a spin off of my traditional recipe.

Marinated Vegetable Salad

Marinated vegetable salads are classic in the South.  It's a colorful blend of vegetables marinated overnight in a sweet oil and vinegar dressing. RETRO SHOEPEG SALAD A retro marinated vegetable salad that has stood the test of time is sometimes called Shoepeg Corn Salad in the South.   Shoepeg Salad is perfect for taking to potlucks, picnics, and gatherings you travel to. It holds up well traveling, and when you arrive, you just give it a toss.   The recipe starts with traditional ingredients like green beans, green peas, and shoepeg corn. Chopped celery, red onions, and red bell pepper add some crunch. To bring the magic, toss all of it together with an oil and vinegar dressing.  

Sheet Pan Supper - Country Pork Ribs, Radishes, Turnips, and Brussel Sprouts

Sheet Pan Supper , means simple preparation, simple cooking, and the best, simple clean up.  A complete meal is put together by roasting a whole meal together in one sheet pan. This has to be one of my favorite meals in a long time.  I just recently discovered roasted radishes and turnips.  I knew they would be a great addition to this sheet pan supper.  My husband is a fan of country pork ribs, so we decided to go with it for a simple supper idea.  We just happened to have brussel sprouts in the refrigerator too so we added them.  

Creamy White Chocolate and Coconut Milk Fruit Salad

Creamy White Chocolate and Coconut Milk Fruit Salad , drained fruit cocktail, peach chunks, pineapple chunks, and mandarin oranges all folded in a mixture of instant white chocolate pudding and coconut milk.   Serve it as a salad or serve it as a dessert like we do most of the time.  I have seen recipes for this fruit salad in many variations.  Although I have made most of them, my husband decided this one is his favorite.

Black Pepper Corn Muffins

Black Pepper Corn Muffins , Southern cornbread muffin using creamy corn folded into self-rising cornmeal and coarse ground black pepper with eggs, and a small amount of buttermilk to bind it all together.   Many a meal when I was a girl growing up consisted of a plate of summer vegetables and cornbread.  Some people think that this meal is a poor man's meal, but for us, it was spectacular.  Add some sliced garden tomatoes and garden onion, a little chow chow (a southern relish) and we were in heaven.

Stuffed Bell Peppers + a Low Carb Option {Granny's Recipe}

Stuffed Bell Peppers , succulent red, orange, and yellow bell peppers stuffed with a flavorful ground beef and fluffy rice, topping them with ketchup or a sweet, tangy sauce. My mother enjoyed making Stuffed Bell Pepper as much as she enjoyed seeing my husband eat them. I only remember my mother using the green bell peppers, but the different colored ones are so readily available now that I usually use them along with some green ones too. The yellow, red, and orange ones are a little sweeter, and my daughter, Jennifer prefer them over the green ones.

Curry Rice Salad

Curry Rice Salad , fluffy white rice, yellow curry powder, and bright English peas are the perfect dish to use up leftover rice.     Curry Rice Salad Using Leftover Rice The joy of this recipe is how simple it is to make.  Using leftover rice is always a plus when needing to get a meal on the table in minutes.  If you have no rice cooked, cook it the night before and heat it to make the salad. When I have leftover rice, one of the first things I think about is making this cold rice salad.
