Christy Jordan's Sweetness! Chocolate Snack Cake

3:59 PM
Chocolate Snack Cake, a little vintage chocolate snack cake but with all the bells and whistles of flavor that a large snack cake has.  The cake is rich and intense with chocolate using, butter, sugar, eggs, self-rising flour, chocolate syrup, and chocolate chips.  Did I say rich and intense chocolate flavor?

I am thrilled to share with you a  recipe from Christy Jordan's cookbook, Sweetness.  It is filled with her favorite recipes from family and friends as well as heartwarming stories of her grandparents and great grandparents.

I have my eye on several recipes, like Lovelight Yellow Two-Egg Chiffon Cake, Old Fashioned Butter Rolls, and Lela's Fried Peach Pie Bars...so much yumminess in one place.

When I was trying to decide on what recipe to share, I knew I wanted one that came from one of her grandparents, so I chose the Chocolate Snack.

Chocolate Snack Cake is an old recipe that goes way back using chocolate syrup.  When I grew up, you could only buy chocolate syrup in a can.

We had to use a bottle can opener to pour the chocolate syrup.  You know, the one that pokes a hole in both sides of the can so yo can pour it.

Now you can buy chocolate syrup in a plastic bottle with a pour spout.  My my...I enjoyed going down memory lane.  Just out of nostalgia, I still buy it in the can...cannot resist.

This cookbook exemplifies the sweetness of Christy Jordan and yes the ones in her family that has gone before her.

I have met Christy and have followed her blog, Southern Plate for years, so I am excited to see some more recipes from her loved ones that I had not seen in her cookbooks or on the blog.

I too love vintage recipes, but I love her heart for the Lord most.  She is such an inspiration to me to meet each day with sweetness!

I am sharing just one of the recipes in this fabulous cookbook, but recommend getting your copy soon.  Sweetness is available on Amazon.  Don't wait any longer to get your copy.

Better yet give a copy to someone for Christmas.  It will be the sweetest gift you give this Christmas.

Chocolate Snack Cake
  • 1/2 cup butter, room temperature
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup self-rising flour
  • 1 1/2 cups chocolate syrup (Hershey)
  • 1 1/2 teaspoon vanilla
  • 1 cup semisweet chocolate chips

Preheat oven to 350 degrees.  Using a non-stick cooking spray, spray a 8 x 8 inch baking dish.

In the bowl of a stand mixer using the paddle attachment, cream the butter and sugar together until light and fluffy, about 1 to 2 minutes.

Add the eggs one at a time beating on low, scraping down the sides of the bowl until all is incorporated well.

Add flour, chocolate syrup, and vanilla, beating until all is incorporated about 2 minutes.

Remove bowl from the stand mixer.  Add chocolate chips, folding them into the batter.

Pour batter into prepared dish.  Bake for 40-45 minutes or until center springs back when lightly pressed down.

I received a free copy of Christy's book to review, but as always all opinions are mine.
