Marinated Cheese Bites, an easy dip version of the popular Marinated Cheese Block.  Combine all the marinade in a jar and pour over the cheese bites.  Gloriously delicious at any gathering.

This make ahead appetizer recipe for Marinated Cheese Bites was introduced to me by a friend I met at a scrapbook retreat this past weekend.

She adapted the recipe from a popular recipe on Pinterest where you marinate layers of Sharp Cheddar cheese in between cream cheese.  Rather than layer it, she cut the cheese into bite size pieces and tossed them in the marinade.

This is a very colorful and tasty appetizer with a great presentation, and I think because of all the colors it makes a great holiday appetizer.

Marinated Cheese Bites are a gloriously tangy, rich, and creamy dip you can serve with crackers, tortilla chips, or crusty bread.

If you are going to a party and need to bring an appetizer, but you want something different.  You want something easy, but more than anything you want to wow your guest.  This is the appetizer for you!  It's not only tasty.   It's easy, and it's absolutely Gorgeous!

Marinated Cheese Bites
Adapted from:  Sandy Lumley

  • 1/2 cup olive oil
  • 1/2 cup white wine vinegar
  • 3 tablespoons chopped the fresh parsley (or cilantro)
  • 8 green onions thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon basil paste
  • 2 oz. pimentos, diced (or red roasted bell pepper, diced)
  • 1 teaspoon salt
  • 1 teaspoon coarse black pepper
  • 8 oz. chilled sharp cheddar cheese, cubed
  • 8 oz. chilled cream cheese, cubed

In a glass, bowl, add cheddar cheese and cream cheese, toss gently; cover and set aside in the refrigerator.

Combine first 10 ingredients, blending thoroughly with a wire whisk until all ingredients are incorporated well.  Immediately pour over cheese.

Gently fold marinate around cheese being careful not to mash the cream cheese.  Refrigerate 8 to 24 hours before serving.

Garnish with parsley and serve with crackers.

Cook's Note:  To make it easier to cube the Sharp Cheddar cheese and cream cheese place in the freezer 10-15 minutes before cutting into cubes.
