Mama's Southern Baked Beans

Thick and rich with just the right amount of sweetness, these baked beans are a perfect side dish for whatever you cook up for your next gathering.   CLASSIC SOUTHERN BAKED BEANS Mother's easy to make baked beans are just that,  EASY.  This classic dish has canned pork n' beans, onions, bell pepper, brown sugar, mustard, Worcestershire, and the star, Bacon.   I could not post my mother's Potato Salad recipe (previous post) without posting her Southern Baked Beans recipe, also.  Like the potato salad recipe, I have had this one in my head for years too. I watched my mother make her potato salad and baked beans a gazillion times, and I don't remember her making one without the other, but I suspect that there were times when she did. I know what the ingredients are in her baked beans, but I am not sure about the exact amount of the ingredients each time. 

Waldorf Salad

The Waldorf Salad recipe is straightforward and delicious and can be made with ingredients from your pantry.  It is ready in 15 minutes and easy for family gatherings or potlucks.    Granny's Classic Waldorf Salad I have been making this classic Waldorf Salad recipe for the holidays and special occasions for years. The recipe comes from my Mother.  It is one of my favorite recipes growing up. The original Waldorf Salad was introduced on March 14, 1893, at the Waldorf Istoria Hotel in New York by the first executive chef for a charity ball and became an instant success.  In years since, the original recipe, which consisted of apples, celery, and mayonnaise, has taken on more additions.

Just like Mother, I keep this salad as simple as possible.  My family loves this salad year-round, especially around the holidays.   This brings up Thanksgiving around the corner, always a favorite.   I know this salad will become one of yours, too.

Oven Smoked Brisket is tender meat that tastes like it has been smoked in a smoker for hours.  You don't need a smoker to enjoy this mouthwatering oven smoked brisket. Beef Brisket Smoked In The Oven The best Texas style brisket is tender without falling apart while slicing, and it has that thick layer of smoky, peppery bark surrounding each slice.  This recipe meets all of those standards. Brisket was a new cut of meat, you might say, at our house growing up as a teenager. When my mother first started cooking brisket, she would cook them in the oven at first, and then, when she got a smoker, she started smoking them. The best part about my mother cooking brisket was not how she cooked them but how she selected the one to buy. The briskets you buy in Texas are usually known as a packer cut—this means that it’s the entire chest muscle, and most of the time covered with a generous layer of fat and weighs anywhere from seven to eleven pounds. 

Peanut Butter No Bake Cookies

Peanut Butter No Bake Cookies are a fast and easy recipe that is perfectly sweet with brown sugar and loaded with oatmeal. They always satisfy the craving for something sweet.  I love the moist, chewy texture and rich peanut butter flavor that just takes minutes to make, and the hardest part is waiting for them to set up so you can eat them. When my children were small, I would give them a spoon to scrape the sides of the pan and get all that yummy peanut butter mixture.

Garden Green Beans and New Potatoes

Fresh Green Beans and New Potatoes are a simple side dish full of flavors from the garden: homegrown green beans  and the first crop of new potatoes.   GRANNY'S GREEN BEANS AND NEW POTATOES Growing up, we could not wait for the first crop of green beans and potatoes to come out of the garden. Fresh vegetables are the best if they are fresh out of the garden, and you cannot beat them.  I love Fresh Green Beans and New Potatoes cooked with ham or bacon. This is another side dish that Mother would make by cooking a pan of cornbread, slicing onions and tomatoes, and calling it a meal.

Marinated Carrots

Marinated Carrots, a vintage salad recipe, are mainly known as Copper Pennies, Sweet and Sour Carrots, but we know them as Magic Carrots.  Perfect for the holidays, potlucks, and even an elegant dinner. Magic Carrot Salad All the magic happens in these carrots when they are marinated in a sweet and sour mixture overnight yielding a delightful taste of my childhood. Magic Carrots are a unique side dish that brings memories of my childhood.   Back in the day when I was growing up, it seemed mother would bring these carrots out around the time spring came; to me, they screamed Easter.  

Stovetop Hamburger Potato Carrot Casserole

Hamburger Potato Carrot Casserole is super easy to make for a weeknight meal.  This was a mainstay meal when my children were growing up. STOVETOP HAMBURGER STEW There is nothing more filling than a hearty bowl of hamburger stew with potatoes and carrots, and this one is ready in 30 minutes. When I tell people we are having Hamburger Potato Carrot Casserole for dinner, they say, "That sounds good, what's in it?"  I answer them with, Hamburger Potato and Carrots--- simple ingredients.

Old Fashioned New Potatoes and Peas in a White Sauce {Granny's Recipe}

Old Fashioned  New Potatoes and Peas , sometimes called Southern New Potatoes in a White Sauce.  There is one thing for sure about this recipe for New Potatoes, and English Peas smothered in a creamy white sauce, it has been around for ages.  My Mother passed it down to me, and her Mother passed it down to her, tried and true recipe. The first vegetable I want to eat in the spring from our garden growing up is new potatoes and fresh English peas. Mother would wash and scrap the new potatoes, slice them, or you can also quarter them if you like a chunkier potato.  While the potatoes are cooking, she makes the white sauce. I want to let you know I use leftover new potatoes at times to make a leftover makeover dish.  Especially in the summer when new potatoes are plentiful from the garden.  Boil the potatoes and eat them with butter and fresh herbs refrigerate the leftovers and then the next day use them to make New Potatoes in a White Sauce. Weeknight Family Supper Meal: #4 Salmon Croquettes

Weeknight Family Supper Meal , an inspiration for a meal one night of the week that may include ideas how to make part of the meal ahead, how to freeze any leftovers or how to make leftovers into a makeover for another meal.   Most people don't know how easy it is to make salmon croquettes.  Mix up a few ingredients, mince onions, egg, and seasoning in a bowl, roll them into small little rolls, roll them around some saltine cracker crumbs and fry in oil.  Voila, salmon croquettes.   See how easy, and oh! so delicious.  Perfect for a weeknight meal.

Southern Collard Greens ,  a delicious Southern dish served in most households all year long, especially around the holidays.   In the south, we generally cook large amounts of greens at one time, referring to them as an ole' mess of greens. My Mother's recipe for collard greens is the best.   Her recipe brings out all the secrets to the perfectly cooked greens.

Stuffed Bell Peppers + a Low Carb Option {Granny's Recipe}

Stuffed Bell Peppers , succulent red, orange, and yellow bell peppers stuffed with a flavorful ground beef and fluffy rice, topping them with ketchup or a sweet, tangy sauce. My mother enjoyed making Stuffed Bell Pepper as much as she enjoyed seeing my husband eat them. I only remember my mother using the green bell peppers, but the different colored ones are so readily available now that I usually use them along with some green ones too. The yellow, red, and orange ones are a little sweeter, and my daughter, Jennifer prefer them over the green ones.
