My son-in-law, Ben, and I love to cook together.  On most holidays and a weekend of trying new recipes,  we will get in the kitchen and cook together.   For Christmas, it is our  Standing Rib Roast , Easter is our  Whole Bone In Ham , and a tailgate appetizer is  Grilled Whole Jalapeno Poppers . For this recipe, I have included two methods of preparation with tips and tidbits, how to broil lobster tails and how to bake lobster tails.

Air Fryer Fried Green Tomatoes

These air fryer green tomatoes deliver a crunchy outside with a smooth succulent inside.  The perfect summer food you will ever devour.   Fried Green Tomatoes The air fryer is the perfect way to cook fried green tomatoes.  I like to call them healthified fried green tomatoes.  To finish them off, you can sprinkle a generous drop of coarse salt, salty capers, or a few drops of hot sauce. To make air fryer green tomatoes, start with medium size unripe tomatoes.   I like to use light green tomatoes that are pale green and have a little pink coming through the skin.  They are not quite so sour.   Don't make the mistake of choosing green heirloom tomatoes.  Green heirloom tomatoes are fully ripe tomatoes, a different variety of tomatoes. I love combining self-rising cornmeal and panko for the coating, and of course, don't forget to double dip to get the most delicious, crunchy outside, divine.

Crisp Blistered Okra Recipe is a simple and fast okra dish that is crunchy, flavorful, and not at all slimy.  Some like it better than fried. There is nothing like fresh okra in the summertime.  I love okra any way you can cook it, but blistered okra could become my favorite way to eat it. This okra is super easy to make and takes very little prep work.  What keeps the okra crisp and does not release its juices which can be gummy, is to not add any water (liquid) when cooking the okra.   Another tip is to heat the avocado oil, firing hot but not burning, and then add the okra.  This renders the crisp outside to the okra and a tender inside.  This is also how I cook mushrooms, which makes a great compliment to the okra.   Once the okra is cooked, stop stirring it.  Continuing to stir the okra will change the texture of the okra, which is why it is best to cook the okra just before serving. Creamy Baked Mashed Potatoes are the perfect side dish for any meal, but they are superb in every way for a holiday meal. Standing Rib Roast is succulent, exceptionally flavorful, and looks stunningly elegant on the holiday table.  This prime cut of meat can be intimidating to cook but rest assured, it is effortless. For our Christmas dinner, we have enjoyed Standing Rib Roast, also known as prime rib roast, for several years now, and this last year I decided to try my hand at making Popovers to go with our meal.  They turned out fabulous, perfect addition, so I think I will try the Yorkshire Pudding this year. We decided to keep the sides simple too.  We served  Creamy Baked Mashed Potatoes and my Magic Green Beans . Simple is always best.

Fabulous fresh Watermelon Juice. Naturally sweet, refreshing chunks of watermelon yield a superb juice, perfect on a hot summer day.     WATERMELON JUICE The ingredients are simple—just one: watermelon. Spice it up by rubbing the cut side of lime onto the rim of the glass and dipping it in the spicy Tajin. It's so tasty. I have expectations of making watermelon juice each summer. After spending time in Mexico on a mission trip, watermelon juice became a favorite.   I remember it was the first thing I thought about on my way to eating breakfast.   I remember most of the watermelon juice being served at room temperature, and it didn't bother me at all.  The vibrant flavor of the watermelon was delightful.

Turnip Hash Browns

Turnip Hash Browns are an excellent low carb side dish and the perfect substitute for potatoes.  Make them in an air fryer or roast them in the oven, seriously delicious, not to mention keto friendly. Turnip Hash Browns are a yummy addition to any meal, not just breakfast.  I have always enjoyed turnips cooked with turnip greens, but I have played around with roasting them in the oven and cooking them in the air fryer for an alternative to potatoes in recent years.   I like to peel them and cut them up in small cubes versus shredding them.  I keep it simple and toss them in a little drizzle of olive oil or avocado oil and sprinkle your favorite seasonings on them.  If you would like to cook them in the air fryer, just spray a little avocado oil on them with your favorite seasonings.

With warm weather and the peak of the tomato season coming, I wanted to share one of my favorite appetizers and an afternoon snack, Mini Caprese Salad Skewers.  The best part about this recipe is it only calls for four ingredients, fresh, light, and delightful. Fresh grape tomatoes, mini mozzarella balls, fresh basil, stacked on mini skewers, and a drizzle of balsamic glaze makes for the perfect bite, heaven on a stick.

Roast Bone In Chicken Breast with Fennel, an elegant dish, and delicious with complex flavors.  But don't let that keep you from devouring this perfect entree.   Fennel is a wonderfully delicious vegetable when cooked to full tenderness like bone in chicken breast take, which takes longer to cook than boneless chicken breast. My idea that the fennel would lend flavor to the chicken ad the chicken would flavor the fennel nicely was beyond my expectations.  The results were remarkable.

Cauliflower has become one of our favorite vegetables.  I have always broken the cauliflower into flowerets and roasted them with a little olive oil and seasonings.  After seeing several recipes come across Instagram, I was so intrigued by roasting a whole cauliflower I had to give it try. The key to getting a tender succulent return on roasting a whole cauliflower is to cook it in butter with fragrant spices and herbs before roasting.  This will cut down on the roasting time and lends a beautiful sauce to serve over the cauliflower cut into glorious steaks.
