FLORETS.  I prefer to buy the heads of broccoli and cauliflower to ensure they are fresh and crisp.  Cut the florets into small pieces with stems removed as much as possible.

Chill or Not to Chill.  Before serving, the salad must be chilled for at least an hour to marry the flavors into the vegetables.  If serving the next day, I recommend refrigerating without the dressing.  Add the dressing an hour before serving and chill in the refrigerator.

Add-ins.  The simplicity of the salad is delicious, and add-ins are welcomed.  You may want to add more crunch with sunflower seeds, chopped walnuts, or pecans. Dried cranberries, raisins, or chopped apples are great additions to add some sweetness.  Another depth of flavor can be added with different cheese, Colby, white cheddar, or pepper jack.

How To Store Leftovers.  Keep leftovers in the refrigerator for up to a week.  Remember, the longer the salad is in the fridge, the soggier the vegetables will get.

Sugar Substitutes.  I have made the salad using Sugar, Truvia, and Swerve sweeteners, and it is truly as delicious using either.

HOW TO MAKE BROCCOLI CAULIFLOWER SALAD


Add broccoli, cauliflower, and red onions to a large bowl.  Toss together; set aside.

In a small mixing bowl, using a wire whisk, mix mayonnaise, sugar, apple cider vinegar, salt, and pepper until creamy and smooth.  

Taste the dressing and add more ingredients to balance the taste if needed.

Pour the dressing over the salad and stir until the salad is well coated with the dressing.

Cover and refrigerator for at least one hour before serving.
