 Sometime in the late 80s, my mother-in-law gave me this recipe for Rush Hour Supper that someone had given her, that someone had given them, and so on.

Isn't it like that, you get a recipe from someone, who gets it from someone, and then you never know where it originated from.

All I know is that this recipe was a staple in our house when my children were growing up.

You can make Rush Hour Supper in no time with a few ingredients that you usually have on hand, and it is another way to use hamburger.

Oftentimes, I serve this dish with either String Beans, Buttered Corn, and some type of bread or cornbread. You could also just serve it with a salad and bread.

Although I think it is one of those one-pot meals that you can just eat by itself, it's excellent. I do have to say that one of my children was not a fan of this meal growing up.

What is so funny today is that she is raising five boys who are nothing like she was, a picky eater. 

Guess who is using this recipe as her go-to recipe when she needs a quick meal, or actually just because she thinks it is delicious!

TIPS AND TIDBITS FOR THE BEST HAMBURGER RUSH HOUR SUPPER


Hamburger.  Choose lean ground beef (90/10 or 85/15).  It offers a good balance of flavor and healthier fat content.  If using fattier ground beef, drain the excess grease before adding other ingredients.  For a good sear, use medium-high heat to brown the ground beef in a larger pan, allowing the meat to spread out and sear properly.  If the pan is too small, the meat will steam instead of brown, resulting in less flavor.

Flavorful liquids.  Use beef broth, or a mix of water and beef broth, to cook the rice, which adds a depth of flavor.

Rice.  I prefer long grain rice in the recipe, but any rice will work.  And my favorite brand is Uncle Ben's Original Long Grain Rice.

Add vegetables.  Although the recipe does not call for additional vegetables, I occasionally add a cup of whole kernel corn, English peas, or diced bell pepper at the end of the cooking process.  If you add potatoes or carrots, add them at the beginning of the cooking process.

Leftovers.  Store any leftovers in an airtight container in the refrigerator for up to 4-5 days.  Simply reheat in the microwave.

WHAT YOU NEED TO PREPARE HAMBURGER RUSH HOUR SUPPER


Ground beef (I use lean ground beef)
Onion
Diced tomatoes 
Long grain rice
Salt and pepper
Coriandar (optional)

HOW TO PREPARE HAMBURGER RUSH HOUR SUPPER


Add hamburger meat to a large skillet, and season with coriander, salt, and pepper, saute on medium high heat until the hamburger is browned.  

Add onions and tomatoes, rice, and water.

Season to taste with salt and pepper.

Cover and simmer until the rice is fluffy, approximately 25 minutes.

  1. I made the same thing for my 3 kids when they were growing up, but we called it "Cowboy Grub" and the boys just loved it! LOL Hamburger went pretty far back then for a growing family!
