Oven Rotisserie Chicken Breast,  succulent tender chicken breast that stands on its own or in any dish that calls for cooked chicken and better than store bought.     Rotisserie Chicken is one of my all time favorite meats to eat.  On a buffet, I will pick the rotisserie chicken first.  It is hard to beat the taste of rotisserie chicken that it is cooked until it is so tender and falls off the bone.   The chicken thigh is my favorite piece to eat, but on the eating plan that I am on, I can only have skinless, boneless chicken breast, so I decided to create a juicy, tender skinless, boneless chicken breast version.

As soon as the holidays were over and I started back on the healthy eating plan I have been on since 2017, I knew I wanted some of these Roasted Little Tomatoes on my menu rotation.   They are super easy to make and a bonus, they are super delicious too!  haha! I like to roast these up and keep them in the refrigerator for a healthy snack, flavorful salad, in addition to a tasty hamburger and a topping over mini meatloaves.  I have found the ideas for the lovely jewels are endless.

Cajun Cabbage Shrimp Jambalaya , cajun spices, savory broth and shrimp with spicy turkey sausage along with cauliflower rice.  A delicious low carb skillet meal that is healthy and nutritious.  Just the right dish to start the new year! As much as I like to cook, it can be tiring around this time of the year.  With all the meals around Christmas and the New Year, it can get pretty challenging to come up with a quick dinner.  And something that is not too rich or heavy. I really appreciate the convenience of this quick Cajun Cabbage Shrimp Jambalaya.  It only takes 30 minutes to make from start to finish.  I use cabbage slaw mix which gives more color to the dish and great flavor. The heartiness of the vegetables, the flavors of the Cajun turkey sausage and shrimp and with all of it seasoned with a creole cajun seasoning well, it just makes my mouth water thinking about the dish.

Peanut Butter Cup Cookies, a miniature Reese's Peanut Butter Cup pressed in the center of a warm chewy peanut butter cookie right out of the oven.   My Mother made these when I was growing up, especially at Christmas. You may be asking the question why homemade?  Believe me, you will never buy canned ever again.  Mother use to make it from the recipe on the back of the bag of cranberries. I decided a couple of years ago that I wanted to enhance the sweet tartness of the cranberry flavor. So I added pomegranate juice and chopped dried cherries along with some chopped pecans for some crunch.

Sage Pork Tips and Rice Dressing with all the flavors of Thanksgiving.  The pork tips are cooked low and slow in the oven with mushrooms and onions and a sprig of fresh sage and thyme nestled in the broth.     I grabbed a large package of pork tips and our local Sams this past week at a terrific price.  I like to cook half of the package and then freeze the rest, but this time I decided to cook the whole package.  As the temperatures here in North East Texas is getting pretty chili, I couldn't wait to cook something warm and comforting. We love beef tips, and I wanted to use the same cooking method of low and slow as I do with them.  I cooked the Pork Tips in a 300 degree oven for 2 hours.
