Dumpling cobbler is a favorite around our house, and this Pear Dumpling Cobbler is a must around this time of the year.  

The simplest of ingredients are used in the Pear Dumplings Cobbler, pie dough, pears, sugar, and butter.  That's right, only four ingredients.  The pears are the star in this recipe.

Pear Dumplings Cobbler is a cozy dessert to serve a crowd.  It can be made ahead of time and ready to serve plain or with a scoop of ice cream.

The Pear Dumplings Cobbler can be made ahead of time and is also freezer-friendly.  Prepare the cobbler except for pouring the hot solution of butter and sugar over the cobbler.  

When you take the cobbler out of the freezer, prepare the buttery solution and pour it over the cobbler, and bake.

TIPS AND TIDBITS FOR THE BEST PEAR COBBLER


Choose firm, ripe pears.  The best varieties that hold their shape well when cooked are Anjou, Bosc, or firm Bartlett pears.  The skin on the pears is very thin, so it is not necessary to peel the pears, unless it is your preference.  I chose not to peel the pears.  They are thin and have an incredible flavor of the pear.  

Check for ripeness.  Select pears that are ripe but not overly soft.  Gently press your thumb on the neck of the pear.  It should yield slightly.  If the pear is ripe all over, the pear is too ripe for a cobbler.  If the pears are too hard, you can ripen them on your counter for a few days.  

Layers.  In this recipe, layering the pie crust between the pears is how all the magic happens to make the dumpling texture.  

Syrup solution.  Heat the water, sugar, and butter only until the butter is melted.  Do not boil the syrup solution.

To avoid a mess.  I like to put my cobbler on a sheet pan before placing it in the oven to bake.  It does not always bubble over, but it will depend on how juicy the pears are.

WHAT IS THE DIFFERENCE BETWEEN A DUMPLING COBBLER AND JUST A COBBLER


A cobbler is made with fruit at the bottom of the baking dish, and a biscuit dough or pie crust is placed on top of the fruit.  When cooked, the fruit releases its juice and mingles with the top crust.  The cobbler will be runny.

A dumpling cobbler is made with a pie crust layer on the bottom of the dish, fruit placed on top of the crust, and then another crust placed over the fruit.  A solution of water, sugar, and butter was poured over the entire cobbler.  When cooked, this forms a dumpling texture with the bottom and upper crust.  The cobbler will be thick and creamy with dumplings.

WHAT YOU WILL NEED TO PREPARE PEAR COBBLER


Recipe of pie dough to fit an 11-inch x 14-inch baking dish

Rolling Pin
Pizza cutter or sharp knife
Sliced Pears
Fruit fresh
Sugar
Butter

HOW TO PREPARE PEAR  COBBLER


Preheat oven to 400 degrees F.  Slice pears in a large bowl and toss with fruit, fresh and vanilla; set aside.

Mix flour, salt, shortening, and cold butter together with a pastry blender until well blended. Add water to the well blended flour mixture. Mix all ingredients together with a fork until they come together slightly in a ball.

Divide the dough into thirds. Roll one-third of the dough on a lightly floured surface with a rolling pin large enough to place into a large oblong dish. Push the dough up the sides.  Place 1/2  of the pears across the dough.

Roll one-third of the dough on a lightly floured surface with a rolling pin large enough to place into a large oblong dish.  Place the rest of the pears across the dough.

Roll the last third of the dough on a lightly floured surface large enough to fit over the pears.  Lay rolled out the dough over the pears.  Take a large knife and cut all the way through the cobbler from the lengthwise all the way to the other end of the cobbler in 2" strips across the dish.  Approximately 5 strips.  Turn the pan and cut all the way through the cobbler into 2-inch strips horizontally across the cobbler.  Approximately 7 cut strips.

In a large saucepan, heat sugar,  butter, and water over medium heat until butter melts.  Pour over the pears in the prepared dish.

Sprinkle with coarse sugar.  Bake for 1 hour.
