I am a big fan of the cherry and chocolate combination, so I decided to make some chocolate cherry brownies.   

For the recipe, I used my favorite box brownie mix and a box of the popular Queen Anne Cordial Cherries.  Then, to make it rich and decadent, I poured a chocolate ganache over the top.

Don't worry that these brownies are so easy to make and use few ingredients, that these Cherry Cordial Brownies are less than exciting.

TIPS AND TIDBITS FOR THE BEST CHERRY CORDIAL BROWNIES


Brownie mix.  The brownies will only be as good as the brownie mix you use.  Using a quality brownie mix is not about buying the most expensive, but about buying quality.  I have used the Duncan Hines Chewy Fudge Brownie mix for years, and it is outstanding.

Enhance the flavor.  Add a teaspoon of instant espresso powder to the batter.  The coffee flavor isn't noticeable, but it enhances the chocolate's richness.

Manage whole cordials.  Freeze the cordials solid before baking to help them hold their shape and prevent them from leaking out.

Avoid overmixing.  Mix the batter just until the dry ingredients are combined with no flour streaks remaining.

Bake and cool.   Prepare and bake the brownies as a single layer and let them cool completely in the pan before placing them in the refrigerator.

Top with a Ganache.  You can prepare a simple chocolate ganache by pouring heavy cream over chocolate chips and stirring until smooth.  Allow the ganache to cool slightly, then pour it over the chilled brownies and spread it.  Chill again until the ganache is fully set.

Leftovers.  Store in an airtight container for up to 7 days to extend the freshness.  The cold temperature may firm them up too much, but you can bring them back up to room temperature or warm a slice in the microwave for a few seconds.

WHAT YOU NEED TO PREPARE CHERRY CORDIAL BROWNIES


1 (18.3 oz.) box brownie mix (plus ingredients to make)
2 (10 oz.) boxes cordial cherries
1 (16 oz.) Betty Crocker's Hershey Milk Chocolate Frosting

HOW TO PREPARE CHERRY CORDIAL BROWNIES


Preheat the oven to 350 degrees F. and grease a  9x13-inch baking dish.

Place the cherry cordials at the bottom of the baking dish, in 5 rows across lengthwise and 4 rows horizontally.  

In a large bowl, prepare the brownie mix according to the instructions on the box.  

Scoop the brownie batter into the prepared dish over the cherry cordials, being careful not to disturb their position in the baking dish.

Using an offset spatula, spread the batter evenly across the baking dish, being careful not to move the cherry cordials. 

Bake for 30-40 minutes or until a toothpick comes out clean.

Let them cool completely on a wire rack and then refrigerate for an hour.  

Prepare the ganache by heating the canned Hershey frosting in the microwave for 30 seconds.

Whisk rapidly until smooth and creamy. Allow the ganache to cool slightly, then pour it over the chilled brownies and spread it.  Chill again until the ganache is fully set.

Refrigerate any leftovers.
