The recipe is based on my Very Blueberry Coffee Cake, switching out with fresh raspberries, butter, sugar, eggs, and sour cream and sprinkled with a coarse finishing sugar.

I grew up with something sweet on the table all the time because my mother had a charming sweet tooth, which she passed on to her four daughters.

  

Mother was an amazing baker.  Even though I learned from her, I wish I had written down more of her recipes and paid more attention when she baked.


To this day, we each want something sweet after each meal.  


Although, as I am older and my metabolism has slowed down, the days of having something sweet after each meal have had to cease, except during the holidays.  


The recipe for the Raspberry Coffee Cake is a light, sweet treat that I enjoy with coffee for breakfast and for an afternoon snack.


With all the rich food I prepare for Easter, coffee cakes are perfect to serve for an early morning breakfast.

TIPS AND TIDBITS TO MAKE THE BEST RASPBERRY COFFEE CAKE


Don't skimp creaming the butter and sugar.  Cream until pale and double in volume.  This will produce a finer crumb and yield a lighter texture.

The batter should be thick.  With the batter being thick, it is unnecessary to coat the raspberries in flour to keep them from sinking to the bottom.

Raspberries.  You can use fresh or frozen raspberries.  I do prefer the fresh.

Baking dish. The baking dish needs to be prepared well. Either spray it with nonstick spray or line it with parchment paper.

Check for doneness.  Always test with a skewer; a wooden one works best.   You will want to remove from the oven with a few crumbs on the skewer.  Do not overbake.

WHAT YOU NEED TO MAKE RASPBERRY COFFEE CAKE


Butter

Sugar

Eggs 

Pure vanilla

Sour cream

Flour

Baking powder

Baking soda

Salt

Fresh or frozen raspberries
 
Coarse sugar

HOW TO MAKE RASPBERRY COFFEE CAKE


Preheat the oven to 350 degrees F.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 5-7 minutes.

With the mixer on low speed, add the eggs 1 at a time, then add the vanilla and sour cream.

In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, add the flour mixture to the batter and stir until just mixed, ensuring not to overmix.

Fold in 1 1/2 cups blueberries with a spatula, making sure the batter is thoroughly mixed without breaking up the raspberries. Pour the mixture into a 9x9 square dish sprayed with nonstick spray.

Lightly press in batter a few raspberries and sprinkle 1 sugar over the top.

Bake for 35 to 40 minutes or until lightly browned on top and a cake tester comes out with only a few crumbs.

You can cut these into individual servings and flash freeze them for an on the go breakfast.  Other berries can be substituted for raspberries.
