Crispy Oven Baked Tacos

Crispy Oven Baked Tacos made with a homemade ground beef filling, covered with refried beans, and grated sharp cheese then topped with pico de gallo.  A weeknight meal the whole family will keep asking for. 


Recipes that take few ingredients and little time to make are often on our meal rotations.  Oven Baked Tacos are in that category.  I like to cook the taco filling ahead of time and have ready just before popping them in the oven.  

I like to heat the refried beans and have them the same temperature as the homemade taco filling.  

For the cheese, there is nothing better than grating the cheese yourself versus buying the bags of grated cheese.  Don't get me wrong I buy bagged grated cheese, but there are certain dishes I like to use the freshly grated cheese.  

I usually have the ingredients for the pico de gallo on hand, chopping and mixing them all together and hang out in the refrigerator to be ready to top the tacos as soon as they come out of the oven.

WHAT YOU WILL NEED TO MAKE CRISPY OVEN BAKED TACOS

  • Large skillet
  • Large spatula
  • Pound lean hamburger
  • Dried minced onions
  • Chili powder
  • Cornstarch
  • Ground Cumin
  • Red pepper flakes
  • Cayenne pepper
  • Minced garlic
  • Oregano
  • Refried beans
  • Sharp cheddar cheese
  • Pico de gallo
  • Large baking dish
  • Taco shells

HOW TO MAKE CRISPY OVEN BAKED TACOS

  • Preheat oven to 375 degrees F.  In a bowl, mix together minced dry onion, salt, chili powder, cornstarch, cumin, red pepper flakes, cayenne pepper, minced garlic, and oregano; set aside.

  • Heat a large skillet over medium high heat until hot but not smoking.  Add hamburger and cut into small pieces while cooking.  Cook and stir until the hamburger is completely browned 5-10 minutes.  Drain any excess grease.

  • Pour seasoning mixture and water over the hamburger, stirring well.  Simmer until the liquid absorbs into the meat, approximately 5 minutes.

  • Arrange taco shells in the large baking dish.  Place a scoop or two of the hamburger mixture into the bottom of the shells.  Add a scoop of refried beans over the meat.  Sprinkle the cheese over the refried beans.

  • Place the tacos in the preheated oven and bake for 5-10 minutes or until the cheese is melted.

  • Remove from the oven and top with pico de gallo. 

  • Serve immediately.


Baking tacos make it easier to prepare several tacos at once.  Keeping them hot and crunchy all at the same time.

These Crispy Oven Baked Tacos are a big hit on weeknights when I need a quick meal for unexpected teenage grandsons stopping by at dinnertime.

  • 1 lb. lean hamburger
  • 2 teaspoons dried minced onions
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon minced garlic
  • 1/4 teaspoon oregano
  • 15 oz. canned refried beans, heated
  • 1 cup shredded sharp cheddar cheese
  • Pico de gallo
  • 18 taco shells
