This recipe is a childhood favorite of mine. My mother would always make Pear Salad with canned pear halves, as none the difference from fresh pears.

As a young girl growing up in the 60s, I remember you could only buy fresh pears in the fall. You could only buy fresh fruit season. 

Not like it is today with so many fresh fruits available all year round.

Today, I use only fresh pears, with the Green d'Anjou variety as my favorite for this recipe. 

The flavor and texture remind me so much of my mother's recipe. 

You have to know that even canned pears were pretty pricey back then and were a special treat when she would make this salad and serve it on a bed of iceberg lettuce.

I love the memories of my mother making these and the sacrifices she would make for us to have a wonderful meal at her dinner table.  


Pear Salad

Ingredients:
    2-4 Ripe Green Anjou Pears (or 4-8 canned pear halves)
    juice of 2 limes
    4-8 tablespoons mayonnaise or miracle whip
    4-8 tablespoons cheddar cheese, shredded
    1 jar maraschino cherries, drained (optional)
Directions:
If using fresh pears, peel, cut in half, and core pears, squeezing lime juice on each half a soon as they are peeled to prevent darkening on the pears; set aside.  If using canned pears, drain pears.

Place each pear half, round side down, on a serving platter.

Spoon 1 tablespoon of mayonnaise or miracle whip in the cavity of each pear half.

Sprinkle shredded cheddar cheese on top of the mayonnaise.

Place a maraschino cherry on top of shredded cheese.
