As soon as the holidays were over and I started back on the healthy eating plan I have been on since 2017, I knew I wanted some of these Roasted Little Tomatoes on my menu rotation.   They are super easy to make and a bonus, they are super delicious too!  haha! I like to roast these up and keep them in the refrigerator for a healthy snack, flavorful salad, in addition to a tasty hamburger and a topping over mini meatloaves.  I have found the ideas for the lovely jewels are endless.

As much as I like to cook, it can be tiring around this time of the year.  With all the meals around Christmas and the New Year, it can get pretty challenging to come up with a quick dinner.  And something that is not too rich or heavy. I really appreciate the convenience of this quick Cajun Cabbage Shrimp Jambalaya.  It only takes 30 minutes to make from start to finish.  I use cabbage slaw mix which gives more color to the dish and great flavor. The heartiness of the vegetables, the flavors of the Cajun turkey sausage and shrimp and with all of it seasoned with a creole cajun seasoning well, it just makes my mouth water thinking about the dish.

Southern Fried Cabbage with Kielbasa , is a quick and easy one skillet meal for a busy weeknight supper.  Delicious, satisfying, and inexpensive, who could ask for more? Fried Cabbage is a regular side dish around our supper table.  Jim loves cabbage period, and so do I.  We usually add some kind of cabbage dish to our meal rotation two or three times a month.    Cabbage is low carb and has healthy nutrients and fiber.  It can be fried in different fats all the way from rich bacon fat to healthy avocado oil which is what I cooked it in this time. Although, I really like to cook cabbage in bacon fat we are trying to eat healthy these days so for this recipe I started the dish by cooking some thickly sliced turkey kielbasa chunks.

Crustless Sweet Potato Pie , basically a sweet potato pie that has no crust.  It falls into the category of the famous Impossible Pies that was the rage from the introduction of Bisquick in the 80's.   This past weekend I wanted to try out an idea I had with some leftover sweet potatoes.  As Thanksgiving is approaching, I know this recipe is going to come in handy. Don't get me wrong--we love our leftovers, but there is a thing about you can only eat so many sweet potatoes, so that is how I came up with making this pie.

You will never buy packaged granola ever again after you make Simple Homemade Granola .   All though, there  is a ton of variation you can make, the basic ingredients are the same.  The basic ingredients are cereals like oats, sweeteners such as brown sugar, maple syrup, or honey, and then you have some fats like butter or oils.  Then add anything you like to  give it some deliciousness and nutrition, like different seeds, dried fruit and wheat germ. The possibilities are endless, as they say. My favorite way to eat granola is in a Yogurt Breakfast Trifle . A breakfast trifle is simply layered fruit, yogurt, and granola. Why wait for breakfast.  Yogurt trifles can be enjoy any time of the day for a dessert or what about an after school snack.  Once my family gets their  hands in the granola, it so hard for them to stop eating it, so I make sure I keep the ingredients on hand in the pantry. Grilled Summer Veggies ~ Add Them To Your Summer Menu!

Summer is here and what better time to get out and grill. This past Memorial Day Weekend, that is just what we did.  We Grilled Summer Veggies ~ purple onions, cherry tomatoes, zucchini, red bell pepper, and mushrooms which are not a summer vegetable, but oh so good on the grill! You can't go wrong with grilling most any vegetable.  Just use what you have on hand or what is coming out of your garden is even better.  Soak your wooden skewers in a pan of water and start adding the veggies.  Or you can use a grilling pan to grill them as well.  One thing to remember is to keep the veggies as much the same size as possible so  that they cook evenly. They are a quick and easy summer side dish that you are going to want to make often.  So many recipes out their using grilled vegetables from putting them in salads to adding them to casseroles.  I like to make a lot at one time and then do just that ~ add them to a salad.  This is a great way to get your children or

Grilled & Glazed Carrots were part of this last weekend grilling kabobs and vegetables.  My husband is a big fan of Carrots, so I try to cook them as often as I can.
