As summer comes to an end, I'm getting in as many fried green tomatoes as I can.  One of my favorite ways to eat them is in a sandwich.  

There's just something about all that mayonnaise, a generous sprinkle of salt and pepper, sandwiched between two pieces of bread, even when toasted.  So good!

My favorite sandwich is a BLT.  And my personal favorite way to eat a BLT is in the style of a club sandwich, epic!  

When I was a little girl, we lived in Colombia, South America.  My Dad worked for Shell Oil Company, and we were part of a group of 100 Americans who worked and lived in a small town in Colombia.  

One of the places we would come together and fellowship was in a country club setting, as you see here in America. 

The country club was where our school was during the day, the church on Sundays, and on weekends, it was the movie theater.  In the restaurant, they served the most delicious club sandwich.

Fried Green Tomatoes presents an excellent spin on an already fabulous BLT sandwich.  The method of stacking the sandwich is a big deal.  

First, you will need three pieces of white sandwich bread for the sandwich.  

If you prefer wheat or whole grain bread, that is fine too.  I want to recreate the same sandwich I used to eat as a little girl, so I'm using white sandwich bread.  

Secondly, comes the bacon.  I start off by baking the bacon in the oven until it is perfectly crispy.  Remove it from the pan and place it on a sheet pan lined with paper towels.  

Thirdly comes the tomatoes.  In this BLT, the tomatoes take center stage over the bacon in the club sandwich.  

I begin frying the green tomatoes while the bacon is cooling.  Frying the green tomatoes takes no time, and the sandwich comes together quickly.

As I have said before, I like the slightly pink green tomatoes.  These are the ones that are still really firm but have a pink cast.  

The slightly green tomatoes are sweeter and less sour than the dense green tomatoes.  

Now all the components of this sandwich are ready, it's time to assemble the Fried Green Tomato BLT Club Sandwich. 

While club sandwiches can be single layers, I prefer to make the double-decker club sandwich, similar to the one we used to eat in Colombia.

TIPS AND TIDBITS FOR THE BEST FRIED GREEN TOMATO BLT CLUB


How to assemble the Fried Green Tomato BLT Club Sandwich:
  • Toast 3 slices of white sandwich bread.
  • Arrange the 3 pieces of toast in a row. 
  • Spread one tablespoon of mayonnaise on the top of two pieces of toast and spread one tablespoon of mayonnaise on the top and bottom (both sides) of one piece of toast.
  • Place a piece of iceberg lettuce on top of the first piece of toast with the mayonnaise side up.
  • Place one thick slice of ripe beefsteak tomato on top of iceberg lettuce, season generously with salt and pepper
  • Place two slices of crispy bacon, cut in half, on top of the ripe tomato.
  • Place a piece of toast with mayonnaise on both sides on top of the crispy bacon.
  • Place a piece of iceberg lettuce on top of the toast with mayonnaise.
  • Place a thick slice of fried green tomato on top iceberg lettuce.
  • Place two slices of crispy bacon, cut in half, on top of the fried green tomato.
  • Place the last piece of toast, mayonnaise side down, on top of the fried green tomato.
To cut the Fried Green Tomato BLT Club Sandwich:
  • Pin the sandwich layers together with 4 toothpicks or cocktail swords through the top piece of toast, in four places in a diamond-like pattern, all the way to the bottom piece of toast

HOW TO PREPARE FRIED GREEN TOMATO BLT CLUB


Toast 3 slices of white sandwich bread.

Arrange the 3 pieces of toast in a row.

Place a thick slice of fried green tomato on top of the iceberg lettuce.

Place two slices of crispy bacon, cut in half, on top of the fried green tomato.

Place the last piece of toast, mayonnaise side down, on top of the fried green tomato.

Pin the sandwich layers together with 4 toothpicks or cocktail swords through the top piece of toast, in four places in a diamond-like pattern, all the way to the bottom piece of toast.
Repeat the above steps to make the next two club sandwiches.
