Butter Pecan Fudge Recipe

This fudge is incredibly creamy and buttery, making it the perfect treat to share with family and friends during the Christmas season.  
I have created various flavors of fudge for gifts over the years, including Millionaire Fudge, Peanut Butter Fudge, and Buckeye Fudge, to name a few.

TIPS AND TIDBITS FOR THE BEST BUTTER PECAN FUDGE
Candy chips.  Use high-quality white chocolate chips and butterscotch chips.  Taste varies in generic candy chips, so choose wisely.  The final quality of the fudge will depend heavily on the quality of the ingredients. 
Prep everything first.  Microwave fudge comes together quickly, so have your pan (lined with parchment paper or foil and buttered), ingredients, and tools ready before starting.
Adding pecans.  Slightly warm your pecans before adding them to the hot fudge mixture.  Never add cold nuts straight from the freezer to hot fudge.  This will cause it to set too quickly, making it difficult to spread evenly in the pan.
Microwave in short intervals.  Microwave in short bursts (30 seconds), stirring well between each, until the chocolate is 90% melted.
Finish the melting.  Remove the mixture from the microwave when a few small lumps of chocolate remain.  Continuous stirring with a wooden spoon will melt the rest without overheating.
Work quickly.  Once the mixture is smooth and the add-ins are mixed well, immediately pour and spread it into your pan, as microwave fudge sets quickly.
Store in an airtight container.  As the fudge sets out at room temperature, it can dry out easily. To maintain its creamy texture, store it in an airtight container.
HOW TO PREPARE BUTTER PECAN FUDGE
Butterscotch chips
Unsalted butter (I used salted)
Sweetened condensed milk
Vanilla
Chopped pecans
Chopped cinnamon graham crackers
HOW TO PREPARE BUTTER PECAN FUDGE
Line an 8x8-inch pan with foil, allowing the foil to overlap the sides.  Spray with a non-stick cooking spray; set aside.
Place the white chocolate chips, butterscotch chips, butter, and sweetened condensed milk in a saucepan.  Cook over medium to high heat, stirring constantly until the mixture melts and becomes creamy smooth. 
Stir in vanilla and mix well.  Add the pecans and stir again until all of them are incorporated.  Add graham crackers and stir into the mixture, being careful not to overmix.  
Pour mixture into prepared pan.  If needed, spread the mixture evenly in the pan using an offset spatula.  
Cover and chill until firm (about 1-2 hours).
Using the overlapped foil on the sides, lift out of the pan.  Cut into 1-inch squares.  Remove from the foil and store in an airtight container.
