Ham Rolls are a childhood favorite we had at any holiday celebration. Many times, they didn't make it to the table.
At Thanksgiving, Christmas, and other special occasions, you will probably see these on our table.
The recipe came from my mother in the 60s, when she worked at a tea room.
Today, there are so many variations on the recipe. Some people make them with other vegetables, such as asparagus and green onions, and some use a sweet pickle instead of dill.
I have to say, hands down, the ham roll recipe my mother handed down to me is still my favorite, and it is the one with just ham, cream cheese, and whole dill pickles.

Ham. Use quality deli ham (baked ham, honey ham, or black forest ham). Before spreading the cream cheese over the ham, be sure to pat it dry thoroughly. This will help the pickle stay securely in place while rolling the ham up.

Spread 1 tablespoon of cream cheese on the ham, making sure to cover to the edge of the ham slice.
Lay dry pickle on the long end of the ham.
Begin to roll ham and cream cheese in jelly roll fashion around the pickle; set aside.
Continue with the remaining 7 slices of ham and pickles.
When completed, place ham rolls in an airtight container and refrigerate for 2 hours or overnight.
When ready to serve, slice 3/4 inch thick and place on a serving tray.
