After seeing someone on TikTok make Lofthouse Frosted Sugar Cookie Pops, I had to give them a try.  

With Easter around the corner, I decided to make some with bunny ears and whiskers.  The only difference is the shape.

I have to say they turned out so cute, not to mention delicious.  I even had some help from my little grandson.  He enjoyed the time making them and gave a thumbs up on the taste.  

We put them in cute little containers and shared them with my neighbor's grandchildren.

TIPS AND TIDBITS TO MAKE THE BEST BUNNY LOFTHOUSE COOKIE POPS


Lofthouse cookies.  White lofthouse cookies are what I used, but other colors would be great to use as well.

Too Much Frosting.  Too much frosting makes the cookie's dough too soft, causing the pops to fall off the stick.

Securing the stick.  Dip the tip of the lollipop stick in melted chocolate, then insert it into the chilled, shaped cookie dough to act as glue.

Dipping Technique.  Do not swirl the pop in the chocolate.  Instead, dip it straight down and back up.  Gently tap your wrist to remove excess chocolate.

Chocolate Choice.  Use candy melts or almond bark, such as Candyquik, rather than regular chocolate for easier melting and setting.

WHAT YOU NEED TO PREPARE BUNNY LOFTHOUSE COOKIE POPS


Stand Mixer
Springform scoop
Rimmed baking sheet
Lollypop sticks
Bunny decorating kit
Parchment paper or wax paper

HOW TO PREPARE BUNNY LOFTHOUSE COOKIE POPS


Line two baking sheet pans with parchment paper; set aside.

In the stand mixer bowl, combine Lofthouse Frosted Cookies and cream cheese.  Mix until combined thoroughly.

Form the dough mixture into 12 cookie dough balls (I use a 1 1/2 inch springform scoop).  Place on the prepared baking sheet.  Flatten each cookie dough ball to a 2-inch circle.

Secure a lollypop stick in the center of the circle's flat side, careful not to break through the cookie dough.

Chill in the freezer for 15-20 minutes until completely frozen.

While the cookie dough is in the freezer, melt the candy melts in a microwave in 30-second intervals, stirring after each interval until smooth.  

Remove the cookie dough from the freezer one pan at a time.  

Dip the cookie dough in the melted white chocolate one at a time, allowing the excess to drip off.  Do not dip more than one at a time before decorating the cookie pops.

After dipping each one, immediately arrange the bunny face on the cookie pop.  

Let it sit until the coating has completely set, for approximately 20 minutes.
