TIPS AND TIDBITS FOR THE BEST SOY BRAISED BEEF SHORT RIBS
Beef tips. Use well-marbled beef cut, bone-in short ribs. Pat the ribs completely dry with paper towels to ensure a superior, browned crust. Sear the batches over medium-high heat in a Dutch oven.
Low and slow. Use a heavy-bottomed pot to cook at a gentle simmer (300-325 degrees F.) for 3 or 4 hours.
Soy sauce. Use a high-quality soy sauce. Low sodium is acceptable.
Prevent Dryness. Cover the pot tightly. Using a round piece of parchment paper directly on top of the ribs) prevents drying out and keeps the meat submerged. This is optional. A good, tight, even a heavy lid will be perfect.
Salt Management. Because soy sauce is very salty, reduce the amount of added salt in your seasonings.
Low-carb option. To make this Leto or low-carb-friendly, I substituted the brown sugar for Swerve Brown Sugar. And for the soy sauce. I substituted for Bragg's Liquid Aminos.

- Braising pot or a heavy-bottom pot
- Short Ribs
- Coarse salt
- Avocado oil
- Ginger
- Garlic
- Cinnamon Stick
- Bay leaf
- White pepper
- Chinese five-spice powder
- Brown sugar
- Soy sauce
- Beef Stock
- Green onions for garnish
HOW TO MAKE SOY BRAISED BEEF SHORT RIBS
- Coat the short ribs in salt and set aside to bring up to room temperature, about 1 hour.
- Heat avocado oil in a large braiser or heavy-bottom pot over medium-high heat. Add the short ribs in a single layer, not touching, and sear until brown, 3 to 4 minutes on each side.
- Add ginger, garlic, cinnamon stick, bay leaf, white pepper, and Chinese Five Spice powder. Add brown sugar, soy sauce, and beef broth.
- Bring to a simmer and reduce the heat to medium-low or whatever temperature to maintain a gentle simmer. Cover with lid and let the short ribs cook until they fall off the bone tender, about 2 and 1/2 hours.
- Remove the lid and discard the cinnamon stick and bay leaf. Serve the braised short ribs in a dish over noodles, rice, or mashed potatoes with a generous spoonful of the juices rendered from the short ribs.
- Garnish with sliced green onions.
