Spicy Cajun Potato Salad is very easy to make and tastes better when made the day before.  It has the perfect spicy kick, but not too spicy, with a secret ingredient.


Cajun Potato Salad

A new Cajun twist on an old recipe that will elevate your next potluck, family gathering, or holiday meal.


This recipe for Spicy Cajun Potato Salad came about from a need to use up some Yukon Gold potatoes and green onions before they went bad.

Potato salad is one of my family's favorite dishes.  

For this recipe, I started with my recipe for potato salad, which I cook the potatoes in a little crab boil, and then added some celery and a little Cajun seasoning to bring out the Cajun flair.

I decided to break up the potatoes a bit to allow them to absorb all the spicy flavor.  It was fabulous.
 
We enjoyed this Cajun-style potato salad so much that I think the next time I make it, I will add some crawfish tails — now that will be Cajun for sure!  I hope you get to make some of this delicious salad soon.

Note: Depending on your preference for the consistency of your potato salad, you may add more of the spicy dressing.

WHAT YOU NEED TO PREPARE CAJUN POTATO SALAD


Yukon Potatoes, peeled and cubed
Salt
Dill pickles, diced
Onion, diced
Celery, diced
Green onions, sliced thin
Fresh parsley, roughly chopped
Mayonnaise
Yellow mustard
Bottle crab boil seasoning
Creole seasoning
Ground pepper
Boiled eggs, diced

HOW TO PREPARE SPICY CAJUN POTATO SALAD


In a large stockpot, add the potatoes and Cajun crab boil, then fill with enough cold water to cover them just over the top.

On medium high heat, cook the potatoes just until fork tender. (That is when you stick the fork in the potato cube, it will only separate in half and not fall apart.)

Drain potatoes well and break up slightly with a fork. In a large mixing bowl, gently mix together cooled potatoes, dill pickles, onion, celery, green onion, and parsley. In a small bowl, stir together mayonnaise, mustard, and creole seasoning; mix well.

Pour spicy dressing mixture over the potato mixture; gently mix together thoroughly. Add pepper to taste. Fold in the eggs last to prevent over-mixing; mix lightly but thoroughly.

Transfer to a serving bowl and garnish with paprika. Refrigerate until time to serve.
